    Thumbs up Easy Choc Mousse

This is one from Nigella Express and it is DIVINE! I've already made it once...

150g mini marshmallows (I used normal ones and chopped them up small)
    50g soft butter
250g good dark choc (pref 70% cocoa solids)chopped into small pieces
60mls hot water from the kettle
    1 x 284 mls cream
    1 tsp vanilla

Melt in a saucepan the marshmallows, butter, choc & water. Once melted together remove from the heat and allow to cool.

Whip up the cream and vanilla till thick then slowly and carefully fold in the cream to the choc mix (the cooler it is the quicker you'll be able to eat your mousse But you don't want it firm so just keep an eye on it).

Then spoon into glasses and refridgerate till you are ready to eat. Depending on the heat of the choc mix it could take longer.

    SOOOOO fantastic
