I know that is what my mum uses when she makes her cheesecake![]()
Ok so i used to make these really easy individual cheese cake things and i cant remember what was in them.
For the base it was just the butterscotch snap biscuits warmed and molded so they are concave iykwim. The filling i know had Phili and lemon juice but cant remember the 3rd ingredient. Maybe sour cream?? Anyone know what i am talking about or do i just sound madThen all you had to do was top them with grated choc and omg oh so yummy. Very quick and easy too if you remember the ingrdients

250g Cream Cheese
2 eggs
1/2 cup castor sugar
Butternut Snaps
Patty Pans
Toppings-
Chopped Mars Bar
Berries
lemon or lime zest
Set oven to about 180. Line a muffin tin ( normal muffin tin) with about 8 paper patty cases, put a butternut biscuit in the base of each patty pan ( don't worry if they don't fit perfect, they will when they are cooked). Beat cream cheese unitl nice and creamy and soft, gradually add sugar, then eggs one at a time. When all blended and creamy, add to patty pans and top with favorite topping. If using zest, mix into cheescake mixture before putting in patty pans. Bake for about 20 - 25 mins. Allow to cool and then put in fridge
The way you do the bases is the same cai but all i do is mix the phili, condensed milk and desired amount of lemon juice and fill the bases with it. No cooking req'd (well apart from the bases iykwim). I will keep that recipe too though for when i have more time so i can give it a try. Thanks

I put the biscuits into the patty pans or muffin tin etc and put into a warm oven for a couple of minutes (they go soft not too long or they will burn) When soft just push in the centre of them to make them concave so you can put the filling in. Mix the standard size tub of phili and standard size can of condensed milk together well and then add lemon juice to taste. (makes quite a bit so you can always just do 1/2 and 1/2 if you want) When the biscuit bases have cooled spoon the desired amount of filling in and you can top with grated chocolate if you want (more for presentation than anything) and refridgerate til set. Super easy and very yummy. Will keep for a couple of days in fridge if they last long enough.
