    Homemade pancake mix - Just add water!

    The two big boys in this house love pancakes, and instant pancake mix <shudder> if I don't make pancakes. So, watching Nigella the other day, she had make ahead pancake mix, where you add egg, milk, and melted butter to the dry mix.

    Just wondering, since I am making this primarily for the boys, and to make it as easy as possible for them, could I add egg replacer (its a powder isn't it?) and milk powder to the dry mix, and then all the boys have to do is add water? (I would say the melted butter as well, but that could be pushing it a little, and also as maybe something for them to take away with them camping)

    I would have added vanillin sugar as well if I had any, since I always add vanilla to my pancakes.

    Why don't you try it. If it works & it's good, you've got a recipe you could sell to women's magazines, etc.

    depends how many you generally make but try this recipe its quick easy and quite healthy

    Pancake Recipe (but we make them small like piklets)
    1 cup milk
    1 cup self-raising flour
    1 egg

    and if you want to sweeten it up a little bit add a table spoon of sugar
    you can also add coco powder or banana's its quite an addictive recipe my DP loves it and makes them just about every morning

    We use a basic recipe that is the same as above. I add 1 tbsp honey and double it . I guess if you tell them to just add milk rather than water, and use the vanilla sugar and egg replacer than you've got something simple as well.

    Thanks for the little 'push' MD. Maybe that's just what I needed!

    I will post a (hopefully) perfected recipe soon for all the pancake fanatics! Mizqtie, the usual recipe I use to make pancakes is like yours, with sugar, but vague on the amounts. I just chuck it in the bowl.

    I may start just with the egg replacer, and maybe a different batch with the milk power as well. I don't doubt the Man's cooking abilities, just their cleaning up abilities. And if its convenient, then maybe they can make them (and clean up) and give me a break!

    Homemade pancake mix - Just add water and egg.

    Okay, the recipe!


    600g plain flour
    50g baking powder (14 teaspoons)
    2 teaspoons bicarb
    1 teaspoon salt
    50g caster sugar (1/4 cup)
    2 cups full cream powdered milk

    Combine thoroughly in a large bowl (I found a whisk to do the job beautifully), then spoon into a large jar (will just fit into a 1.5L jar).
    Store in the pantry for up to about six months.

    To Cook: (this is the 'ratio' to go with, it yields nine pancakes about McDonald hotcake size)
    350mL dry pancake mix
    1 cup water (250mL)
    1 egg
    1 tablespoon melted butter

    Mix well, cook in buttered/oiled pan.

    These are THE best pancakes I have ever made. I was hungry at 10.30 last night, so thought it a perfect opportunity to try the mix. I made each pancake with two soup spoons worth of batter. Nom nom, so delicious and light and fluffy! Mixing with the whisk aerates the flour, and if you spoon it in the jar carefully (don't bang the jar) then the mix will stay fluffy. Unfortunately, Ryan woke up just as I was licking my fingers after scoffing five (I only gave the Man four! ), so I went to bed with a full tummy and had a tummy ache!

    If you didn't want to put in the powdered milk, then change the amount of dry pancake mix to 1 cup (to 250mL instead of 350mL). I changed the amount to accommodate the extra bulk of the powdered milk.

    When I do my next shop I will get egg replacer (budget permitting), and let you know how that one goes too.

    FYI to make it even easier you can add oil instead of melted butter. We do it all the time

    A light flavoured oil, like canola, light extra virgin etc. Nothing too strong like straight olive oil.
