    Question Lemon Meringue ... Need a Yummo recipe !!

    Hello all,

    I need a really nice & fluffy Lemon Meringue Pie recipe ... one with a delicious base & that doesn't need a spring pan as i only have a glass pie dish

    Here is a dangerous receipe. Definitely not for weekly consumption.

    Lemon meringue pie



    Line a pie dish with crushed marie biscuits

    or scotch fingers or ginger nut biscuits and melted butter.

    Filling:

    2 tins condensed milk

    2 egg yolks

    Juice of four or five lemons and rind of one



    Mix egg yolks and lemon juice into the condensed milk,

    making sure it?s thick and lemony enough.

    If not add some more juice.

    Topping

    Beat four egg whites until soft peaks form

    and slowly add 3/4 cup castor sugar,

    until it?s a stiff immoveable meringue.

    Spoon carefully over the base and bake

    at 150 until it?s pale brown.

    This is one of my favourite recipes

    Passionfruit and Lemon Meringue Pie

    1 tin condensed milk
    1/4 cup lemon juice
    1/4 cup passionfruit pulp - use the tinned variety when fresh is too $$$
    2 x eggs separated
    1/3 cup caster sugar
    18cm prepared pastry flan - or about 8 - 12 individual ones depanding on the size. I just buy the shortcrust pastry one either frozen or fresh.

    Pre heat oven to 180 degrees C.
    Combine condensed milk, lemon juice, passionfruit and egg yolks - mix well and pour into pastry flan.
    Beat egg whites until still peaks form and gradually add the sugar until fully dissolved
    Spoon over filling and bake for 10-15 mins until light golden.

    Serve warm or cold - i cant help myself and eat it warm because the filling is still all gooey and sticky but sets better as it cools down.

    Its one of the easiest recipees and everyone loves it. If you dont like passionfruit, just take it out and maybe add abit more lemon juice instead
