Cai, I make those tinned corn muffins! I just forget the oven temp . Committed to memory...

But its one tin of creamed corn (scrape out all the corn)
one tinful of self raising flour
one tinful of grated cheese

Combine altogether. The creaminess of the corn binds it altogether. Spoon into lightly greased muffin tray. Bake in preheated oven for 20mins at 190.

I also add a pinch of cayenne pepper to the mix sometimes, and use a standard size (12 hole) tray. A sprinkle of parmesan cheese would add a bit of extra flavour too. I think that the 400-odd gram tins equals about two cups, instead of trying to stuff grated cheese back into the tin just to fish it out again!

When I make other muffins, I bake them for 20 minutes at 170 (my oven is fan forced), that's what I do these at I think.
