    Default Pancakes!!

    Hi,

I have been wanting pancakes for a while now. So I am after everyones pancake recipes!

I've got one off my mum but she hasnt given me exact measurements cause she does it by memory. But this is what I got my her..

    1/2L Milk
    5 Eggs
    1 tblsp Sugar
    Flour

By looking at that the pancakes might be very bland (but might be what I need ATM!)

    So anyone got any recipes??
    Thanks Guys!

Mine vary depending on what is in the cupboard, but I used to make them every Sunday for the family.

    2 cups self-raising flour (I use 1 cup wholemeal self raising & 1 cup normal self-raising)
    2 eggs
    1 tbsp honey
    1/2 tsp salt
1/2 cup plain yogurt or sour cream or cream.... something creamy & preferably sour tasting...
    2 cups milk

I mix it all up & if its too thick I put splashes of water in until its all good.

    YUM!!!

This is my foolproof waffle/pancake recipe

    1 Cup SR Flour
    2TBS Sugar
    1 TBS Oil
    1 Egg
    3/4 Milk
    1 Tsp Vanilla

Mix together... Now I think this makes about 4 waffles/Pancakes... So you may want to double even triple it depending on how hungry you are...

Marc makes the most DIVINE blueberry pancakes...

Another thing I love with pancakes is to make Maple butter, or honeycomb butter By blitzing butter with maple syrup or honeycomb, rolling into a log and wrapping in gladwrap... back in the fridge till its firm then cutting off discs of butter when needed

Veronica, you should try my 'singing pancakes' recipe! Basically you make the plain pancakes (as below) then add a punnet of blueberries to the mix (they're in season RIGHT NOW). They are called singing pancakes cos you have to wait and listen until you can hear the blueberries "singing" before you turn them over (that way they are all hot and jammy on the inside)!!

If you make your pancakes with plain flour, they will be thick and heavy instead of light and fluffy. My DH makes killer pancakes, he uses a recipe out of Maureen Simpson's book. They give a nice thick fluffy American style pancake:

    1 cup SR flour
    pinch of salt
    1/4 teasp. bicarb
    2 tblsp sugar
    1 teasp. vinegar/lemon juice
    1/2 cup milk
    1 egg
    1/2 teasp. vanilla essence.
    1 Tblsp melted butter/oil

Basically, you sift all the dry ingredients in together, then you beat the egg in a small jug, add the milk, vanilla, oil and vinegar, then beat the liquids into the dry ingredients. If you leave it for 5-10 minutes while the pan is heating you will see that the vinegar starts to react to the bicard (bubbles form) which is why they are so light and yummy.
    :-)

Oooh Marydean, that sounds yummy and light with the bicarb/vinegar mix.

I have to say we did Cai's recipe over Christmas for both waffles and pancakes, and it was brill!

I could spoil my family too. It's not a usual brekkie around here, but a good Sunday morning feed before DH's back to work on Monday.

Gee my family are boring! I suggested pancakes this morning and neither DH nor DD were very interested. Their loss! They ended up with cornflakes and toast - boring.

Cai, I'm coming to your place for brekkie and leaving my crew at home. Oh Blake like pancakes too. I might bring him.
