Oh all the millions of cakes I've made first birthdays to date the absolute best every time is the cheap no name packet butter cake mix from Coles 70c each and holds like a dream. Can be frozen to make icing easier too. All round best ever cake
Rouge I'm not sure how high it will be yet, because I don't think my round cake tin is a very standard size and then I'll have the bigger one underneath. I think it'll be safer though to have a board and dowel, I can just imagine it all collapsing!
We thought that me4ever, it's a great idea! A friend of mine does great moulded ice cream cakes, but it has to feed a lot of people so needs to be big, I'm not sure there's room in our freezer. I think they get ice cream cakes on their birthday at daycare though
I kind of trialled the cake on the weekend. BGs recipe is seriously amazig, I'm in love! Not too sure about ganache as icing, it might be a bit much. And it's not pure white, so I might go with fluffy frosting. I think I need to get a cake leveller lol, my cutting the top off was quite wonky. I reckon I'll need two batches for the bottom, to make two cakes, and one batch for the top, split in two for two smaller cakes.
I tried the toffee and think I might need a candy thermometer. I got it to soft crack stage, got distracted for just a second and bang, it wasn't toffee anymore, went too far.
I think it's all going to work alright though, putting it together will be easy enough as long as I can get each part right.
