Well, it's a brrrrr freezing Winter day here in Ballarat ... and I was wondering what is everyone's favourite Winter Dessert
... I wanna make something warm & yummy for a surprise dessert for DP after dinner tonight ... so, any suggestions ??... Would anyone care to share their recipe ??

Anything with hot custard gets my vote I reckon. Mmm....wintery comfort...
Bit late for tonight now, but for another night this is the yummiest winter dessert - warming, filling, sweet and even quite healthy!:
Coconut & Pineapple Rice Pudding
3 cups milk (I use rice milk as I dont eat dairy but any milk works)
4 cardamon pods or 1/4 tsp ground cardamon
1 cinnamon stick or 1/2 tsp ground cinnamon
1 cup brown sugar
60gm butter
2 cups coconut cream
3/4 cup uncooked short grain rice
1/4 tsp nutmeg
1/3 cup raisons
1 cup canned crushed pineapple
Bring milk, cardamon and cinnamon slowly to a boil in casserole dish with a lid. Turn off heat, leave for 5 mins, then (if not using ground spices) strain through seive. Stir in sugar and butter, then add coconut cream, rice and nutmeg. Bring back to boil again and simmer gently for 20 mins uncovered.
Transfer to oven and bake with lid on for 15 mins. Add raisons and pineapple and bake for a further 15 minutes with lid on. Remove from oven and let stand for 5 mins before serving,
ohhh I make an easy butterscotch pudding that melts your toes.... better find that recipe again
Here it is "DONNA"
* Low-fat Chocolate self-saucing Pudding *
INGREDIENTS ;
reduced-fat margarine, to grease ovenproof-dish
1 Cup SR flour
1/2 Cup, lightly packed Brown Sugar
1/2 Cup Cocoa Powder
1/2 Cup Skim Milk
40g reduced-fat marg, melted
2 Cups of Boiling water (whoops guys, I left that important detail out before)
METHOD ;
Preheat oven 180c.
Lightly grease with reduced-fat margarine a 6cup (1.5L) capacity ovenproof-dish.
Combine the flour, HALF the brown sugar & HALF the cocoa powder in a medium bowl. Add the milk & melted margarine & stir until well combined. Pour into the prepared ovenproof-dish.
Sift the remaining brown sugar & cocoa into the bowl. Sprinkle pudding with the sugar mixture. Gently pour in boiling water.
Bake in oven 35-40mins or until a cake-like top forms & a skewer inserted halfway into the centre comes out clean.
Remove from oven & set aside for 5mins to cool slightly (and sauce will thicken a little).
PLEASE NOTE : There is lots of sauce BUT it's not thick ... yet does taste so yummy for a low-fat dessert
I find I need to have it in the oven for the 40mins
(is nice as left-over dessert the next day/night)

What a goose I am! I just realised this was for desserts!!!
I like the brownies on the Nestle site. I use fair trade chocky and feel like I'm sticking it to them!!!![]()
(Banana Cream Pie- ) My kids and Hubby like this for a special treat.
Short crust Pastry
3-4 sliced bananas
2 eggs, separated
1/2 cup of castor sugar
1/2 cup sugar
1 cup cream, lemon or orange flavouring.
Line pie dish with pastry. Slightly bake pastry then fill with sliced bananas. Beat yolks with castor sugar and cream ,poor over the bananas and bake for1/2 hour in a moderate oven( 180 degree - 200 degree celcius). Whip egg whites,3 Tablespoons sugar and flavouring until stiff. Pile on top of pie and bake for a further 10 minutes in a moderate oven until meringue is slightly golden brown.
Mmmm Sticky Date Pudding....
