reduced-fat margarine, to grease ovenproof-dish
1 Cup SR flour
1/2 Cup, lightly packed Brown Sugar
1/2 Cup Cocoa Powder
1/2 Cup Skim Milk
40g reduced-fat marg, melted
2 Cups of Boiling water (whoops guys, I left that important detail out before )
METHOD ;
Preheat oven 180c.
Lightly grease with reduced-fat margarine a 6cup (1.5L) capacity ovenproof-dish.
Combine the flour, HALF the brown sugar & HALF the cocoa powder in a medium bowl. Add the milk & melted margarine & stir until well combined. Pour into the prepared ovenproof-dish.
Sift the remaining brown sugar & cocoa into the bowl. Sprinkle pudding with the sugar mixture. Gently pour in boiling water.
Bake in oven 35-40mins or until a cake-like top forms & a skewer inserted halfway into the centre comes out clean.
Remove from oven & set aside for 5mins to cool slightly (and sauce will thicken a little).
PLEASE NOTE : There is lots of sauce BUT it's not thick ... yet does taste so yummy for a low-fat dessert
I find I need to have it in the oven for the 40mins
(is nice as left-over dessert the next day/night)

(Banana Cream Pie- ) My kids and Hubby like this for a special treat.
Short crust Pastry
3-4 sliced bananas
2 eggs, separated
1/2 cup of castor sugar
1/2 cup sugar
1 cup cream, lemon or orange flavouring.
Line pie dish with pastry. Slightly bake pastry then fill with sliced bananas. Beat yolks with castor sugar and cream ,poor over the bananas and bake for1/2 hour in a moderate oven( 180 degree - 200 degree celcius). Whip egg whites,3 Tablespoons sugar and flavouring until stiff. Pile on top of pie and bake for a further 10 minutes in a moderate oven until meringue is slightly golden brown.
Make a scone dough, roll it out flat, break up into chunks cooking chocolate, one can strained blueberries, sprinkle with sugar and then roll it up and slice into 1 and half cm thick slices lay the slices out on a baking tray brush with egg sprinkle with sugar.. bake until cooked and golden brown
Serve with Vanilla Icecream
These are just delicious and my sweet Dh makes them for me
