HI All,
This recipe is not my own but I wanted to share it because it makes the yummiest white choc mud cakes. I also use the same mixture for cupcakes just the cooking time varies.
makes 1x 22cm round or 1x 19cm square
Ingredients:
335gm unsalted butter chopped
200g white choc (the better the choc the better the cake so don't skimp)broken up
2 2/3 cups castor suger
1 1/2 cups of milk
2 cups plain flour
2/3 cups Self raising flour
1tsp vanilla essence
3 eggs beaten.
Method
1 - Grease tin well I use a silicone one and just use the canola spray
2 - in a saucepan combine butter, choc, sugar and milk. stir continuously over a low heat until all melted and smooth. Pour in a bowl and allow to cool for 15-20 min
3 - lightly beat in sifted flours, essence and eggs until combined and pour into the cake tin.
4 - bake in a moderately slow oven approx 160 - 170 for 2 hours
5 - cake developes a thick sugary crust during baking cover with foil if it gets too dark. test firmness by touching with fingers about 5 min before end of baking time, then test with a skewer
6- leave to cool in tin until cold
I always ice this recipe with a white or dark choc ganache this follows:
1/2 cup of cream
400gm of white or dark choc.
melt together in a microwave safe bowl stirring every 30 until all melted and combined, regrigerate until you get the consistancy you want.
** for adult cakes I also add a spirit like Baileys or Kalhuah (sp?) you could use any sweet spirit just add to suit tastes. This will make the setting time for the ganache much much longer so plan in advance and make the ganache the day before and allow setting over night or for several hours. with the white choc ganache you can also add food colours**

NaeNae - How long should I bake them for as cupcakes??
to be honest it varies depending on your oven and the size of the patty pan. I use muffin size ones and in my oven between 30-40 min. I'd suggest start checking them from 20 mins if using smaller ones or 30 mins for larger muffin ones and do the skewer test to see how they go.
Let me know how they turn out - I have a wicked dark choc one as well but when I bake the two the white one always gets the most compliments they are positively evil![]()
