Maybe you could get her things that she can do on her own. Does she like to learn things? Maybe you can get her books (I think you can get them in book shops and in Toys r Us) where she can learn maths and english and things like that. Or some kind of crafty thing that she can do on her own. Maybe in the holidays (I know it's gonna sound like a nightmare) she could have a couple of friends over then they can atleast keep each other entertained, then maybe she will be invited to someone's house. You could hire weekly dvds/videos for her to watch maybe with some popcorn or something (this you could possibly do whilst you were feeding bubs)

As for making breakfast/lunch/dinner, what does she normally have for breakky? Is it possible that she could make her own breakfast? Like cereal or toast? For lunches, maybe you could make things that will go a long way or make things and freeze them before bubs comes? Like quiche, zucchini slice, sausage rolls. Same for dinners, make up some casseroles, bolognaise sauce, things like that then all you have to worry about is making the pasta or veg etc

I don't have a 7 year old but I'm sure they could be very helpful, does she have regular chores that she does for pocket money? If not maybe this is something that you could introduce. She would be capable of cleaning her room, putting any toys away etc.
