I cannot help you with the birth centre questions at Monash, I birthed my three daughters there but they were all high risk CS so a different experience than yours.

I am not sure where you are located but if you want your husband to be included/able to stay with you a smaller hospital may be a better option, at places like Monash it is not very personal, you are more like a name/number if you know what I mean.

Places like Casey hospital have single rooms and encourage Dads to stay (well, they did 4 years ago so unless that has changed), they do not offer epidurals and are a little more about you. I am sure there are more hospitals like this around.
Box hill also had rooms with double beds that you could stay in with DH, you were only moved if the room was needed.
