    How about some crepe wraps or flatbread wraps? Call them roulades if you like... Make a batch of plain pancake or crepe mixture (with plain flour, not SR) and add some chopped herbs or pureed roasted red capsicum and cook (or use flatbread or arabic bread). Then spread with tapenade, pesto, or dip/spread of your choice, add some greens, grilled eggplant, grilled capsicum, or whatever, then roll it up and wrap in cling wrap and chuck it in the fridge for a while. Just cut into slices about an inch thick to serve. It's colourful and healthy, and pretty easy especially if you get the fillings from the deli pre-made!! Just a thought... I'll be doing something like that for Christmas (which I want to boycott btw) when I'm sweltering up near Gympie.

    Alisha You and your rice paper rolls, can't believe I didnt' think of it already!!! hehe

    SnugBug rice balls is always a winner, might do them too but haven't really made them before, what do you use to stick them together with?

    I don't really know how to make rice balls stick together. If you make sticky rice (use short grain brown) and cook it with a bit less water than absolutely necessary, it just seems to sort of work.

    Wish I could explain that better.

    Hey, what about falafel? I can always be won over by fresh falafel. Actually, even stale and slighly mouldy falafel has been known to bring a smile to my face.

    My dinner tonight is peas and brown rice and spinach with tabasco sauce. DH is out

    It's great that one of your visitors is a vego too.

    Rice paper rolls...Well,what can I say? I am obsessed. Probably not as much as Peach though!

    Thanks girls for all of your suggestions and help with what I could make last night

    NaNa YUM YUM YUM! What a hit your 'roulades's' were! I bought 2 different kinds of flat breads one was spinach and herb (green) and the other sundried tomato (orange) so they looked good from the start! then on one I added marinated eggplant, feta, rocket and cashew & parmesan pesto spread and to the other I added hommus, sun dried tomatoes, celery leaf, feta and I caramelised some onion for that one too, YUMO so thanks again

    I also made a little garlic and rosemary spelt loaf which smelt devine cooking and eating, plus we just marinated some tofu and mushrooms in garlic, soy and honey and had it with a rice salad and the leafy green salad that our guests bought over so all in all it was a lovely night.

    Was going to suggest feta or cream cheese/tofutti but it slipped my mushy mind... Colourful flavoured flatbreads are a great idea, too. I'd forgotten about them. I used to use them at Soul Foods sometimes for the roulades, when I couldn't be bothered making crepes!
    Ooh, I made rice paper rolls the other day too. Someone planted the idea in my head... I think I overdid the Vietnamese mint tho - I love it! And then I went out for Vietnamese lunch with my SIL and had them again, but I'd have to say that mine were better. DS ate all the tofu out of them, so maybe that was it...
    I discovered fig and olive tapenade the other day. I think I'm in love.

    NaNa Ohhh that fig and olive tapenade sounds yum too! I can't imagine who would have planted any ideas of rice paper rolls in your head I've got some Vietnamese hot mint in my herb garden and it's great in the asian food.... and rice paper rolls which I am going to make on christmas day, along with more roulades!
