Sounds like a great recipe, Christy! I've been doing something similar 2-3 times a week lately... salad stuff with marinated meat and rice noodles. Great for summer! I tend to throw in cherry tomatoes all the time as Kynan loves them LOL. Adding roughly torn herbs into the salad gives a great flavour too (eg coriander & mint). Last week instead of doing strips of meat I made little meatballs to go in the salad & noodles and that was a big hit. One of the sauces we use a lot is equal amounts of soy & sweet chilli with a little bit of sesame oil & lemon juice. I know soy's not gluten free but tamari could be used as a substitute.
