I co slept on a 100% latex mattress. It was just one giant heavy slab of latex. It was very comfy and I never worried about DSs. One slept on his back, the other was a side sleeper like you descibe.
I now sleep on a new mattress which has a top memory gel layer. I wouldn't be concerned about co sleeping on that either if only I could steal a baby from someone.
Ive never had a Tempur one bit I have heard that they are meant to be bliss. How much of a layer is memory foam type? I am guessing that the mattress only sinks depending on the weight applied, so if your DS was on his own, he'd be fine. Is the concern with the pressure you apply to the mattress and DS being right next to you?

It's a great big slab of memory foam and yes, it is bliss
you're right about the weight. It's more when he's next to me that he could roll in, though he doesn't seem to move once he's asleep next to me. I just don't know how things might change as he starts being mobile.

I can't offer a comparison as I've never slept on Tempur but we have a latex mattress and I LOVE it. Mostly because I am a very light sleeper and whilst DH is a big guy, he can wriggle about as much as he likes and I don't feel a thing. It's nice and firm, super comfy and feels just the same as it did when we bought it almost 9 years ago.
I have never had any concerns about co-sleeping with it.
