    Ok I thought I would post seperately the changes that we made...

    * I used 1/2 the amount of onion because Zander isn't a great fan.
    * I used 2 baby potatoes instead of a small regular potato.
    * Instead of 1 clove of garlic I used a teaspoon of bottled crushed garlic.
    * We added in a handful of canned corn with the veges.
    * I used a serving spoon & put about that much in per pikelet rather than a 1/4 cup

    They were fantastic & Zander ate 3 :eek: We had them just plain without the sour cream.
    I think they'd be great as well with other veges added in & maybe some cheese. Although they were quite tasty with just the extra corn added in!

    thanks for all the fantastic ideas!! Thought I'd add a few as well...here goes....

    Risoni with Mixed Vegetables

    1 small red capsicum - finely chopped
    1 large zucchini - finely chopped
    310g can corn kernels - drained
    400g can crushed tomatoes
    2 tablespoons risoni

    Chop everything up that needs chopping, cook capsicum in med heat lightly oiled pan, stirring, add zucchini and corn, continue to cook for a few mins. Add undrained tomatoes and cook stirring occasionally for about 15 mins or till vegies soften. Then blend to your little ones thickness or leave as is. Meanwhile cook risoni in small saucepan of boiling water uncovered till tender, drain and toss with 1/4 cup of the vegetable mixture.

    Now I cook a bit more risoni, mix it all up so I can freeze the mixture in containers. When I first made it I left out the corn and capsicum as she hadn't had those or risoni, so once she had the risoni, next batch I added corn, then the next batch added the capsicum....I now also add in mushrooms and have put carrot in since the first batch as well...so guess you can add whatever you like!!

    Chicken Aucchini and Parnip Puree

    1 single chicken breast fillet chopped coarsely
    2 small zucchini chopped coarsely
    1 small parsnip chopped coarsely
    1 1/4 cups water

    Put all ingredients in small saucepan, bring to a boil and boil uncovered until vegetables soften and chicken is cooked through, then blend/process mix to your little ones 'thickness'.

    Again I freeze this mix...I put in a lot more chicken, add carrot and just add water to whatever I think depending on how much chicken & veg I've put in!


    Miss Em loves both of these eats heaps!! These are both from the Womens Weekly Fresh Food for Babies & Toddlers book. Have to get going but will post more in future think it helps to have LOTS of ideas!
