Bought a mini muffin tray right so proud .. been thinking of yummy things to make for ava. So found a recipe for banana yogurt muffins. Its says plain yogurt, but I don't have plain yogurt, but I have normal yogurt would that be ok to use? AND can I freeze them? or will they be stale?
What flavour normal yogurt? If its something like vanilla etc, it will have added sugar in it or sweetener, so if you were going to use that than you should use less sugar. Especially if it has bananas in it
Hm, does it mean plain as in vanilla yoghurt (sweet) or plain as in natural (non-sweet) yoghurt? I think you will be fine, but if it means plain (sweet) and you only have plain (savoury), then add extra sugar.
You will be fine to freeze, they will come out yum.
yum share the recipie .. they will freeze fine make heaps and keep them in snap lock bags , i do that ( make sweet and savoury muffins ) and then whack a frozen pack into my nappy bag lunch box and its OK to eat at morning tea time
Check the ingredients. Make sure there is no gelatin. Natural Yoghurt is just that natural as. With all the other rubbish thats in sweetened yoghurt I'd be worried. But thats just me
* 1 3/4 cups self-raising flour
* 1/2 cup caster sugar
* 1 cup natural yoghurt
* 1 egg
* 2/3 cup vegetable oil
* 2 large bananas, mashed
Method
1. Preheat oven to 180?C. Lightly grease a 12-hole, 1/3 cup-capacity muffin pan. Sift flour and sugar into a bowl.
2. Combine yoghurt, egg, oil and 1 cup mashed banana in a large bowl. Gradually add dry ingredients, stirring until just combined.
3. Spoon mixture into muffin holes. Bake for 20 to 25 minutes or until a skewer inserted into the centre comes out clean.
4. Stand muffins in pan for 5 minutes. Turn onto a wire rack to cool completely. Serve warm or cold.

ETA; one more question.. dont kill me girls lol Chocolate @ Ava's age? Yay or Nay? There's a kickarse weetbix / banana with choc chip muffin recipe that I wanna make! Just the whole chocolate/sugar thing scares me i dont know what is appropriate and what isn't kwim?

sO quickly ran to the shop and got some plain yogurt. It asks for 1/2 cup of caster sugar.. even though it's plain yogurt i still don't want to make stuff that isn't good for her.. how do i know what is too much sugar kwim? annndddd if i lessen the sugar will it make any difference to the way the muffin cooks or just how it tastes?
