    Brunch Foods?

    I'm organising Juliette's Christening & as it's a morning service (9.30am) I'm thinking of doing brunch afterwards. The only thing is, other than croissants, danishes & a fruit platter I'm not sure what to offer! I need it all to be fairly simple & made the day before if possible as I won't have much time in the morning. Heating things up is fine on the day, but I don't want anything too complicated that needs to be cooked (or made from scratch) that morning.

    Any suggestions or recipes would be great.

    Little quiches or frittatas.
    Fruit salad (yummy yummy ) or platter.
    Bruschetta or foccacias.
    Waffles.
    Pancakes/Pikelets.
    Fruit muffins.
    Oohh I just did a little search and you could do a breakfast antipasto platter
    Cold sliced sausages
    Fresh figs
    Hard-boiled eggs, quartered, sprinkled with dukkah
    Marinated artichokes
    Marinated feta
    Marinated mushrooms
    Olives
    Oven-dried tomatoes
    Rocket
    Sliced prosciutto
    Sliced salami
    LIttle egg or cucumber sandwiches.

    Oh and I forgot, what sot of drinks would be appropriate? Juices, tea & coffee and maybe champagne with juice?

    I'll DEFINITELY be up for some bubbles I'll have to buy some good stuff specially

    I have a great recipe for potato pikelet thingy's of nigellas that can be made the day before and stored in a container, then served with sour cream and smoked salmon or ham avocado and tomato.

    Leek & Brie tarts (can be made all in advance and then just heated for 10 mins in the oven)

    I've got a whole section on Brunch will find it for you

    Breakfast muffins - Sweet (My apple crumble muffins would be great)
    Savoury - Cheese, Chive & Bacon Muffins

    Grenola Slice (this is AWESOME I LOVE it) and once again can be made in advance.

    Devilled eggs with ham.

    for drinks how bout this punch it is so fresh and yummy!!!!!!!

    2 cans lychee juice (Cold) (I haven’t been able to find this yet)

    1/4- 1/2 bottle Cranberry juice (Cold)

    1/2 - 1 lemon squeezed (Cold)

    1 – 2 teaspoons rose water essence

    3/4 cup sugar & 3/4 cup water dissolve & boil in a saucepan for 1 min then cool

    Lemonade



    Add all ingredients and lastly lemonade to make pink. Sprinkle pink rose petals on top just before serving.

    Drinks, i would do juice, tea, coffee, punch, def champers - guava juice is so yummy with bubbly

    Fruit salad kebabs are a good idea as its less messy than just peices, use paddle pop sticks
    Piklets
    Savoury and sweet muffins
    Cold/room temp frittata or zucchinni slice
    Banana bread
    Fruit cake or thick cut bread
    You could make scrolls (or buy them) like the bakery ones with cheese + vegemite for the kiddies or olives and pesto etc for the adults.

    I am a personal believer of choosing a few really tasty things and having plenty of them rather than having the trouble of making heaps of different things and running out of the favourites.

    Oooh I thought of fruit punch straight away too!

    How about some scones with jam and cream, you could do plain and some fruit ones.
    Spinach and ricotta filo pastries
    Mini pasties
    Cupcakes

    How many people?
    I presume you're thinking about a standing buffet, or are you intending to do something a bit more formal?

    Have a selection of cold platters as suggested:-
    Fruit Salad/Platter and Yoghurt - good for kids, and people that are really eating brekkie
    Breakfast AntiPasto with Pastries and/or nice, fresh bread.

    If you want to do a selection of hot dishes then you can repackage traditional brunch flavours into forms that are easier to reheat and serve en-mass.

    Kedgeree - most prep can be done in advance, leaving only reheating and final assembly on the day - yields a large serving for little effort and is a little unusual.
    Quiches/Tarts - I'd stay away from doing lots of mini quiches and produce a few 12" quiches - bacon/egg (quiche lorraine) - smoked salmon and fennel - leek & gruyere cheese - all very easy to do in advance, if you blind bake the pastry cases and prepare the fillings the day before then all you need to do is fill them and pour over beaten eggs and cream on the day. If you accompany them with a bowl of mixed salad leaves then they will go a long way.

    Bear, we're having around 30 adults & 10 kids (oldest being nearly seven, the rest are three or younger). It's not going to be anything too formal.

    Rach - I was just thinking about you today when I saw lychee juice at Woolworths!! It's in the aisle with the Asian foods. Now I've got to go back and dig out that mocktail recipe you gave me last year that uses it
