    Cheese & Tomato Quchie

    Does anyone have a cheese and tomato quiche recipe ?

    I thought i had one at home but can't seem to find it.

    Michelle,

    I do all of my quiches the same - just change the ingredients to suit what I feel like eating at the time!

    Spray the dish with oil and layer pastry to cover. (Usually takes me 4-6 sheets depending on the size dish I use).

    Mix 6 - 8 eggs (again depending on size you want) with chopped tomato, milk (around 1/2 cup, but up to you) - salt, pepper and any other herbs etc you like.
    Grate in some cheese (however much you like) and whisk altogether - I buy the thinly sliced tasty cheese from the deli at Woolworths and layer it over the pastry in the dish so its like a lining of cheese as well as the cheese mixed through (we love our cheese in our house )

    I don't really have set quantaties - just throw it all together, but it always works out fine

    Bake at 180 for approx 45mins (sometimes takes a little longer if you made a bigger quiche).

    There was a thread asking for an easy peasy quiche recipe, i posted in there. Aso there was another one for quiche lorraine, i posted there too. It's the same minus the meat. My recipe isnt as "eggy" as some in flavour

    My quiche recipe (that I modify a little to spice it up) has cheese and tomato...

    Line a quiche dish with defrosted short crust pastry sheets.

    Mix together 4 lightly beaten eggs, 1 & 1/2- 2 cups of grated cheese, 1 grated zucchini, 1 leek, chopped into small pieces and 1-2 Tb of milk. Pour into quiche dish then layer top with sliced tomato and some cracked black pepper.

    Bake at 200 degrees for 45mins.
