I do all of my quiches the same - just change the ingredients to suit what I feel like eating at the time!
Spray the dish with oil and layer pastry to cover. (Usually takes me 4-6 sheets depending on the size dish I use).
Mix 6 - 8 eggs (again depending on size you want) with chopped tomato, milk (around 1/2 cup, but up to you) - salt, pepper and any other herbs etc you like.
Grate in some cheese (however much you like) and whisk altogether - I buy the thinly sliced tasty cheese from the deli at Woolworths and layer it over the pastry in the dish so its like a lining of cheese as well as the cheese mixed through (we love our cheese in our house)
I don't really have set quantaties - just throw it all together, but it always works out fine
Bake at 180 for approx 45mins (sometimes takes a little longer if you made a bigger quiche).
