I am not a big fan of eggs (despite all my chickens) i'm not a fan of the texture nor the taste.
So i would love for someone to hit me up with some great breakfast / lunch / dinner ideas for the family that don't actually TASTE like eggs.
I know i sound odd but i know they are good for me, especially for breakfast and we have our own fresh from the chicken eggs that we end up giving a heap away.
I'm looking for as healthy as possible using vegetables and basic kitchen staples.
I love eggs so these might be a bit to 'eggy tasting'

Omlettes but put a ton of flavourvful fillings so you dont taste the egg so much. Try using more whites than yolks as they have a milder taste. Almost use them like a wrap rather than the focus. Or crepes?
You can always thow a raw egg in a smoothie depending on how worried you are about Salmonella?
Breakfast: I do scrambled eggs...BUT: I fry up some garlic in oil or butter, then i fry some mushrooms, sometimes a bit of ham or prosciutto and some herbs like oregano or fresh parsley. Meanwhile i whisk the eggs with some milk (or cream if i'm being naughty ) and some parmesan cheese. Then i pour the mixture over the rest in the frying pan and scramble away. Another nice addition is a little truffle oil or truffle salt. You can mix it up, sometimes i use fresh tomato too
Not exactly on the super healthy end of the spectrum, but pancakes are great and use up heaps of eggs... can make them wholemeal or add some berries/ bananas in them to taste less eggy.
Pavlova/ meringues uses up lots of egg whites and has no egg like flavour.... then you can use all the egg yolks to make a custard.
French toast, also soaks in eggs and if you use cinnamon sprinkle/ ising sugar to dust on them afterwards have no egg lingering taste.
Frittata's are also great, a fatter version of an omelette so less 'eggs' there are heaps of recipies online but you can make vegetarian versions with pumpkins, potato, spinach etc, or have them a bit meaty with leftover chicken, hams, etc
I was going to say the same as Novella, the yolks are what has all the 'egg' taste. Try using more whites in omelettes and scrambled eggs. Things like quiche with strong vegetable flavours and cheese will hide the 'egg' taste.
Thanks guys - we do fruit pancakes here which actually aren't that bad - 1 egg, 1cup flour, 1 cup milk but i'm looking for things like the omelettes and the like... will just have to mix a few things togfether and give them a go, i like the idea of the garlic & i can use up extra spinach & the like.
Custard is good and can be made many favours. we also do scrambled eggs with lots of other stuff in it so its not tasting like eggs. I also great up a mess of cheese add cut up bacon onion tomatoes and add a few eggs, mix up and spread on bread and grill.
I can't believe no-one has mentioned fritters! Everything tastes great (and not eggy at all, at least I don't think so) in a fritter!
Sweetcorn fritters with a couple of eggs, about half a cup of SR flour, 1/2 tsp baking powder, and a small tin (about 300g?) of creamed corn, then enough milk to make it the right consistency to drop into a buttered pan - fry each side for a couple of minutes.
Change it up by adding crispy fried bacon bits, or finely chopped chillies, or both (yum!) or using yoghurt instead of milk.
Same basic recipe, but use grated/chopped vegies instead of sweetcorn - carrots, eggplant, onion, capsicums, zucchini, blanched broccoli or cauli, or anything like that, in whatever combo you fancy. Add a bit of curry powder, or morrocan spice, or cajun spice, or whatever you fancy.
and mousse! I know its not exactly healthy but uses lots of eggs, can make different flavours depending on different chocolate used etc, just adapt a basic recipe
coconut macaroon are good too, or if you have some almond meal or almonds (just make your own meal) give the macarons a go. (mainl using egg whites but still!)
