I'm struggling with healthy lunch options that don't take a long time to prepare! Someone suggested making mini frittatas in muffin trays. That sounds like a good idea, but i'm not sure if egg-based dishes would freeze well. Any ideas?

Yep, they do but you will need to reheat them to get the full yumminess back. Also beware what veggies you put in them as some (mushies, zucchini, tomato) thaw out more watery than others. HTH
You could try the regular deep freezer fare - tuna mornay, lasagna, even pasta dishes done with the sauce and frozen. The time saving come from preparing them in a batch and having them there when you are busy.
I've had good sucess making like a fritatta type thing with ham, cheese, eggs, carrot and onion then freezing them. Yumo!
