Do you have a slow cooker?
Beef casserole and beef strog (leave out the sour cream until you reheat it) freeze really well, and are cheap and easy.
I also marinate uncooked chicken breasts and freeze them in snaplock bags, marinade and all. Then just defrost and bake in the oven or throw them on the barbie.
