BIL is a truckie, has had potato loads that past few weeks and SIL gave us soooooooo many potatoes I don't know what to do with them (and and they a bloody huge too!!!!!).
Theres only so much potato bake and mashed, baked, friend, and roasted potatos that I can eat I think!
I actualy don't have a lot of ideas about potatoes. I looked up on taste but there were over 500 so I kind of gave up looking and decided to ask all you lovely BBers your favourite recipes!
What the heck am I going to do with all these friggen potatoes?

I make an amazing potato suffle thingy...
Boil and mash potatos and mix with butter. Spread the mash in a glass oven proof dish.
Mix together three eggs, 1/2 cup cream and some cheese (as much or as little as you like) and pour the mixture over the top of the potatoes.
Put into a moderate oven (about 160 degrees) until the mixure has risen and turned a golden brown colour. Poke it with a knife in the centre to make sure it's cooked the whole way through.
It's soooooo yummy!

cook it into everything (curries, spag bol) all that kind of thing - we cut them small and shove it through everything..
gnocchi!! make up batches and freeze
ooh yeah, do stuff you can freeze! all the things we throw spud in, and then freeze. spud bulks it out heaps and means you get extra meals left over
we put spud through braises, vegie soup (potato and pumpkin base). make some par cooked chips and freeze them (would be kinda like shop bought) and then oven bake them when you want them...
I just made Corned Beef Hash Cakes which is made from mashed potato and left over corned beef, a couple of eggs, some bread crumbs and whatever seasoning you have (onion, chives, spring onion, garlic) I did garlic salt and garlic powder as I didn't have anything else. Then I use an ice cream scoop to make mounds on a baking paper lined tray and put them in the fridge till they get hard. Then shallow fry until golden and have with salad or veggies. And for an extra yumminess mix some whole egg mayo with some mustard and lemon juice and serve with that. You can also cook them slightly ahead of time and bake for an extra crunch.

Potato Gnochi is yummy!
Boil the potatoes and mash, add an egg and enough flour to make a soft dough, roll them into logs and cut into 3-4cm bits and cook in small batches in salted boiling water. Serve with tomato pasta sauce
