    Yeah, except they are not exactly preserved, they're buried in clay and then left to fester, and then dug up and eaten.

    Ok, i can imagine that a little bit mixed into a larger dish might work...what exactly does it taste like M21?

    i dotn think its made that way anymore but i am not sure
    i buy them in a carton of 6 eggs.

    Anyway, they taste a like firm egg that is slightly salty. THe outter layer is slightly transparent. If you dare, you can probably order CONGEE with century egg and salted pork from your yum cha restaurants.

    Very good for if you arent feeling too well and want something light lol
