    20 minutes
    Ingredients (serves 4)

    • 60g butter, at room temperature
    • 1 garlic clove, crushed
    • 2 tbs finely shredded fresh basil
    • 4 (about 200g each) single chicken breast fillets
    • 25g (1/4 cup) dried (packaged) breadcrumbs
    • 1 tbs olive oil

    Method

    1. Preheat oven to 180?C. Place the butter, garlic and basil in a small bowl, and stir to combine. Use a small sharp knife to cut a horizontal slit in the thickest part of each chicken breast to create a pocket. Divide the butter mixture into 4 equal portions. Spread each chicken pocket with a portion of butter mixture.
    2. Place the breadcrumbs on a plate. Dip the chicken into the breadcrumbs, pressing firmly to coat. Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 2-3 minutes each side or until golden. Transfer to a baking tray. Bake in preheated oven for 10 minutes or until cooked through.

    I know you said no breadcrumbs ... they can be easily left off =)

    ok i know u said u want something easy, so maybe keep this one for when u have the time to prep.
    i use Camembert cheese and tasty bout a cup of each, grated.(have used gouda successfuly too, DF thinks camembert is to strong for him
    100gms spinach which i pan fry in butter and nutmeg until wilted
    Bacon, procuitto, panceta, whichever takes ur fancy, cut into strips and fried
    Bread crumbs
    Mushrooms.
    No real measurements, made this one up myself, any left over fillling i freeze for next time
    Mush it all together, cut a hole in ur chicken breast, shove in as much as you can.
    Pan fry to seal then stick it in the oven for about 40mins-ish!

    When I am after something quick and easy I stuff my chicken breasts with grated cheese, baby spinach leaves and whatever cold meats I have in the fridge eg ham or prosicutto. If I have sundried tomatoes they get put in as well. Throw them on a baking tray and sprinkle with some Tuscan seasoning and voila yummy!

    I stuff chicken breasts with camembert then wrap with bacon, trying to cover the slit as much as possible. bake at 180 for around 35mins (depends on your oven).
    Meanwhile I make a sauce with chopped sun-dried tomatoes or sun dried tomato pesto. Fry off the s/d tomato in it's own oil with a few cloves of garlic and some shallots. Add some lite cream right at the end. This is delicious!!!
