    Best Recipe:

    Thin Turkish Bread Base

Beetroot Tzatziki as the sauce on the base.

    Topping:

    Roast Pumpkin Cubes
    Lentils (from a can)
    Lamb

    Topping Sauce:
    Natural Yoghurt
    Fresh Mint
    Minced Garlic

Roast the pumpkin until Golden, while cooking the lamb pieces on the stove top. Once the pumpkin is cooked, mix through the lentils and cook until the lentils are heated through.

    Assemble the pIzza:

Taost the turkish bread a little before assembling. Spread the beetroot dip evenly over the bread and then layer with roast pumpkin/lentil mix and lamb.

Sprinkle a little bit of 'meltable' cheese on top.

Bake in the oven until the cheese is melted.

Top with the yoghurt sauce (a bit of natural yoghurt, fresh mint leaves torn up and a spoon of minced garlic)

Dollop the sauce over the pizza and serve.

    SOOOOOOOOOOOO yummy!

I have a nice one where you put basil pesto on the base, and then I just buy a hot chicken and pull off all the best bits and with that I add cherry tomatoes quartered and some feta. I don't add any other cheese, just crumble the feta. I have had lots of compliments on this pizza too. I usually make my own pesto from scratch, but you could use a jar one if you didnt have the time to make your own.

We have a woodfire oven pizza shop and yes it is great to roast the vegies first with garlic / herbs. Carmelized onion is yum on veg and meatlovers pizzas.

Hi Kimmi, in all honesty, this is the Pesto recipe I use, and it is really easy to do! I do put it in a food processor, and I find that the first lot of ingredients blend better if they have a little bit of the oil with them, otherwise it gets too clumpy and tricky to work with.
    Good luck and enjoy
