    I need a yummy recipe for chicken breast - quick!

    I have 3 good sized chicken breasts out for tea, but have no idea what to do with them tonight!

    we always have kantong, chicken schnitzal, chicken tonight, grilled chicken breast etc, I am after something different and tasty, but not spicy.

    Any ideas??? Thanks

    We do Spiced Chicken with Honey and serve on rice

    500 g Chicken Breast Fillets
    1 Tablespoon margarine
    half cup honey
    8 teaspoons german mustard (which I think equates to 2 tablespoons)
    1 teapsoon mild curry powder

    * Melt margarine, add honey, mustard and curry powder, mix well

    * Arrange chicken, single layer, in a baking dish

    * Pour honey mixture over chicken

    * Cook for approx. 45 mins at 190 degrees. BASTE FREQUENTLY!

    This was a recipe I got from my mum. It was suitable for people who were on Dialysis.

    It very yummy!

    dice it...fry up with some diced onions and parsley and pour a jar of pasta sauce on it.

    it is delicious served with pasta!!

    Chicken Breasts in Creamy Mushroom Sauce

    Ingredients:
    4 chicken breast fillets (skin off)
    Plain flour, seasoned with salt & pepper (for dusting)
    30gr butter
    500gr button mushrooms
    1 tbsp port
    ½ cup white wine
    ½ cup chicken stock
    ½ cup cream
    1 tbsp fresh chives, chopped


    Method:
    Coat chicken lightly with seasoned flour. Heat butter in pan and fry chicken until golden (but not cooked through). Drain well.

    Add mushrooms to pan (softest last), cook until softened. Stir in port, wine and stock.

    Return chicken to pan, bring to the boil and simmer gently for approximately 10 minutes. Remove chicken, cover and keep warm. Add cream, return pan to the boil and simmer until sauce is reduced slightly. Stir in chives.

    Place chicken on serving plates and pour sauce over

    Stuffed chicken breasts

    Chicken breast (obviuosly)
    cottage cheese (i get the one with chives in it)
    minced garlic
    chicken stock
    cream
    sun dried tomatoes
    mustard seeds (wholegrain)
    Bacon
    baby spinich or parsley

    Mix together cottage cheese, garlic, chopped sundried tomatoes
    Slice a pocket in the fillet
    Stuff the chicken with the mixture pin closed with tooth picks

    place in baking dish lay slice of bacon over each breast
    cook at about 180 degrees until cooked.

    sauce

    in frying pan add stock, garlic, whole grain mustard , spinich/parsley and cream

    Pour over chicken before serving

    really nice......

    we often coat chicken in egg white then in either grated parmasen or tasty chesse. cheese melted ayou cook it and keeps chicken moist. yummmoooo!!!

    oohhhh thanks girls,

    Nic, we had a creamy chicken based sauce with rice last night, lol that is why I am finding it so hard to be creative tonight!

    I am being lazy and using the bulk pack of chicken over 2 nights instead of freezing it and having to defrost something else! heheh

    Lisa that sounds great, will keep that one and get some port! yum

    Meegm - do you think I could substitute the cottage cheese with something else?

    I have everything but the cottage cheese?

    Yeah for sure - you could just use noraml cheese - actually you can use anything you like - i have made a steak type thing with finely chopped baby spinch, sundreid tomatoe and garlic and finely chopped onion.. all works the same..

    Ace, I think I am going to give it a go, just change the cheese and put fresh tomato ( no sundried) but still do the bacon and sauce - can't wait - yum

    How long do you think roughly in the oven 30/40mins?

    Relle,

    here are two recipes I often throw together when Im sick of traditional chicken meals:

    Coat them with some seasoning (whatever you have in your pantry), some lemon juice or mustard and grill them and then cut up into pieces and put over a salad of rocket, cucumeber and tomato and drizzle with some balsalmic vinegar and olive oil (or any other dressing you like) and you have your very own warm chicken salad?

    Or you can make some delicious pasta:

    - heat some olive oil
    - Brown 1 onion
    - Add I cubed carrot
    - Add capsicum or any other veg you desire
    - Add in approx three chopped tomoatoes (or 1 can chopped tomato)
    - Garlic
    - peper and salt
    - add chicken - cook to your liking
    - Add 1/2 cup chicken stock
    - Once all this has simmered and all ingredients are cooked, add in your boiled pasta, stir and eat!

    Chop it up into finger sizes and dip in butter then coat in deb/parmesan crumbing add some garlic powder & pepper. Cook in a hot oven turning twice. Serve with Pesto Mayo or Roasted Capsicum mayo and salad & potatoes

    Yum! Also great as a snack for drink nights...

    Chicken wrapped in bacon is nice

    Chop the chicken breasts into three or four peices, wrap a peice of long bacon around it and stab a toothpick in it to hold it together. Cook them in the oven.

    Honey Mustard chicken schnitzels
    Serves 4

    4 Chicken breast s
    4 tbsp wholegrain mustard
    2 tbsp honey
    2 tsp lemon
    salt and pepper
    breadcrumbs

    Flatten chicken breast slightly.

    Combine mustard, honey, lemon juice and salt and pepper and pour over chicken.

    Leave for 20 minutes to half an hour.

    Remove each breast from marinade, don't drain, and press breadcrumbs onto each side.

    Shallow fry and serve with mashed potato and steamed greens. Very tasty.

    Hi Meegm - I did! and it was yum! I stuffed them with cheese and tomato and wrapped them in bacon.

    Thanks so much girls for the ideas, but I will be printing them all out and giving them all a go! lol
