I make a yummy roasted balsamic vinegar and lamb dish. We use lamb chops, seal on all sides. Place in single layer in roasting pan. Place thin wedges of red onion, whole garlic cloves (skin on), and cherry tomatoes in the tray, just randomly throw them in. Sprinkle with chopped, fresh rosemary. In a jug combine 1/4 cup balsamic vinegar and 1 tsp brown sugar (i usually add a bit more balsamic) and pour over. Tightly seal with foil, cook for 15 minutes on moderate oven, then take foil off and continue cooking uncovered until cooked to liking (depends on thickness of chops and how you like then done. usually another 10 minutes). Can also be done with veal. In winter i serve with creamy mash potato and green beans, in summer mash potato and salad. Very yummy.
