Relle.........I may end up resorting to that. I am such a sad case, I actually really ENJOY food shopping........but if I have to take kdis with me I don't get to enjoy it as much......so I am liking your thinking.......

When daylight savings kicks in, I may start trotting off to Coles in the evening.........

As promised, a thai dish recipe called Larb!

You can use any type of mince, but traditionally Pork and chicken is used. Use only small amounts of chilli, if you dont like hot food

    Serving size: Serves 4
Cooking time: Less than 30 minutes

    Serves 4

    Ingredients:

    1 tablespoon peanut oil
1 stick lemongrass, white part only, finely chopped
1 long red chilli, halved and thinly sliced
    250g pork mince
    250g chicken mince
    1 cup chicken stock
    1 red onion, sliced
    2 tablespoons lime juice
    1 tablespoon fish sauce
    1/3 cup coriander leaves
    ¼ cup mint leaves, torn
    1tsp grated ginger
    1 clove garlic
    1 lebanese cucumber sliced
1 baby cos lettuce or lettuce mix
    1 Vine Tomato sliced
    1 Cup Fresh Bean Shoots

    Method:

Heat oil in a wok. Add lemongrass and chilli and stir-fry for 1 minute. Add mince and fry until browned. Add stock and simmer for about 10 minutes or until liquid has evaporated. Stir through onion, lime juice, fish sauce and herbs.
Cool the mince mixture in the fridge if preffered, then arrange lettuce mix, cucumber, tomato and bean sprouts on a platter, and spoon over the mince mixture.

I was trying to think of the name of that the other day *insert twilight zone music and sinister wiggling eyebrows here* SAN CHOY BOW!!! Thank you Kim.

Lucy my mince pizzas are same as Christys... we go the Moroccan spices route, with tomato-based sauce and a combination of sweet and savoury (sometimes apple as the sweet thing, sometimes prunes). OK now you're all going to think I'm a wierdo.

Righteo then! How about some plain old lasagne?

I have just back from shopping.......I usually buy meat from a v.good local butcher, but we are currently on a BIG economy drive,s o I did a supermarket run to get cheaper/discounted meat...........scored every type of mince available (chicken, pork, turkey and beef) as well as lamb loin/backstrap.........the freezer if full again......and if we keep adding to this thread I will have a shed-load of ideas for "cheap" but tasty meals........

    THANKS GUYS!
