    No I think they are called Kofka's or something like that.

    Mince meat pies

    400g minced meat
    1 onion, diced
    1 tbsp flour
    pepper to taste
    2 tsp parsley, chopped
    1/2 cup stock
    Salt only if needed
    flaky pastry (buy pre made)

    Place meat, onion, seasonings and parsley in saucepan and stir well. Add stock. Stir until boiling and simmer for 15 minutes. Cool. Set oveb at 220 degrees. Place pie dish upside down on a square of pastry and cut out a circle for the top. Line greased pie dish with pastry and trim of excess and fill with the cooled meat mixture. Moisten edges of pastry with water and and place the top on and press lightly all the way around to seal. Place slits in the top to allow steam to escape. Glaze with milk or a beaten eagg and place on an oven tray, bake at 220 degrees for 10 minutes, then at 190 degrees for 15 minutes.

    You can also make miniature pies by cutting 6 rounds and putting them into a muffin tin and then a further 6 rounds for the tops. You can also leave off the pastry top and put mashed potato and cheese on top.

    Puffed Beef Loaves, serves 2

    Filling

    250g topside mince
    1 egg, lightly beaten
    1/2 tsp chopped fresh sage or 1/4 tsp dried sage
    2 tsp chopped fresh parsley or 1 tsp dried parsley
    1/4 cup dry breadcrumbs
    2 shallots, chopped
    1 tbsp bbq sauce
    salt
    freshly ground black pepper

    To assemble

    2 sheets frozen ready-rolled puff pastry, thawed
    Beaten egg yolk

    Filling

    In a bow,combine all the ingredients, seasoning to taste with salt and pepper, and refrigerate until firm, about 1 hour.

    To assemble

    Cut the pastry sheets into two 23x20cm rectangles, reserving leftover pastry for decoration. Shape filling into 2 loaves and place on centre of each pastry rectangle. Brush edges of pastry with egg yolk and roll pastry around filling, sealing the edges and tucking under to seal well. Place loaves seam-side down on a lightly greased baking tray. Cut leaves for decoration from remaining pastry and attach to loaves with egg yolk. Bake in a hot oven (200 degrees) for 25 minutes.

    SORRY!!

    Here it is: but please, I am not sure if it is authentic or not......it is one of those recipes that has just evolved..........

    San Chow Bow

    Ingredients

    1 tablespoon of vegetable oil
    1 finely chopped spring onion
    2 teaspoons of crushed garlic
    1 finely chopped red chilli
    400g of minced pork
    1 teaspoon of Chinese five spice powder
    220g jar of water chestnuts, drained and chopped fine
    1 tablespoon of fish/oyster sauce
    2 tablespoons of soy sauce
    1 tablespoon of honey
    75g of bean sprouts
    8 iceberg lettuce cups
    Coriander leaves to garnish

    1. Brown the mince and make sure it is all separated into small bits
    2. Add in all the other ingredients apart from the bean sprouts, lettuce and coriander
    3. Combine well and cook for 20 mins
    4. Stir the beansprouts through gently
    5. Serve in lettuce cups and garnish with coriander

    Tehe it's funny that you posted this lucy as I was thinking about it the other day when we talking about it and I found a really nice WW one in one of thier recipe books. Made it the other night - beautiful and only 3 points!!

    Another easy mince option is to cook it with a sachet of taco mix and some onion then spoon it over pita bread and put some cheese on top. Bung it in a moderate oven until the cheese is bubbly then put a bit of sour cream and mashed avaocado over the top and dig in.

    We make beef macaroni here...
    1 chopped green capsicum
    1 onion
    2 rashers chopped bacon
    500g beef mince
    1 440g can tomato soup
    1.5 cups beef stock
    + macaroni
    very easy & cheap, and surprisingly is very yummy!

    Hi, I just stumbled across this thread. I just bought the mini Women's Weekly book 'Mince favourites' the other week. I have a million recipe books but couldn't resist as DS and DH love anything with mince in it.

    I haven't tried these yet but will be once m/s subsides. I don't think I can handle the smell of frying mince just at the moment.:ms:

    Beef, tomato and pea pies:
    1 tbsp vegetable oil
    1 sm brown onion, chopped finely
    300g beef mince
    400g can chopped toamtoes
    1 tb tomato paste
    2 tb worcestershire sauce
    1/2 cup beef stock
    1/2 cup frozen peas
    3 sheets puff pastry
    1 egg, lightly beaten

    1. Heat oil and cook onion until soft. Add mince and cook. Stir in undrained tomatoes, paste, sauce and stock. Bring to a boil. Reduce heat and simmer uncovered about 20 minutes. Stir in peas and cool.
    2. Preheat oven to 180deg. Oil 6 hole jumbo muffin pan
    3. Cut 2 13cm rounds and 2 9cm rounds from each pastry sheet. Place the 6 large rounds in the muffin pans. Trim any excess. Lightly ***** the base with a fork. Refrigerate for 30 mins. Cover the small rounds with a damp cloth.
    4. Blind bake the pastry in the mufin pan for 10 minutes. Remove and cool.
    5. Spoon mince into the holes. Brush the edges with egg. Top pies with the small pastry rounds. Brush with the remaining egg. Bake uncovered for 15 minutes.

    OOH the Potatoe wedges & sloppy joes sounds like a nice messy meal!!!

    can you post the recipe!

    I have a tray of mince out on my bench this morning defrosting, I am tossing up between soft tacos & lasagne!

    Think I'll do the lasagne as it makes more so extra to freeze & I am gonna do some baking so I can pop more in the freezer!

    Hi Tracey

    Here it is:

    Potato wedges with sloppy joe topping
    4 medium potatoes
    2 tbsp olive oil
    1 clove garlic, crushed
    1 large brown onion, finely chopped
    1 trimmed celery stalk, finely chopped
    1 sm green capsicum, finely chopped
    750g beef mince
    2 tbsp mild american mustard
    2 tbsp cider vinegar
    1 cup tomaot sauce
    1/2 cup grated cheese
    2 green onions

    1. Preheat oven to hot 220deg
    2. Cut each potato into eight wedges. Place in a shallow baking dish, drizzle with half the oil. Roast uncovered about 30 minutes.
    3. Meanwhile, heat remaining oil in a large frying pan. Cook garlic, brown onion, capsicum and celery, stirring until veggies are soft. Add mince. Cook until mince changes colour. Stir in mustard, vinegar and sauce and bring to a boil. Reduce heat and cook stirring until sloppy joe is cooked through and slightly thickened.
    4. Serve wedges topped with sloppy joe mixture, grated cheese and green onion.

    You could also make a bolognaise sauce and use that on pancakes with some cheese or in baked potatoes. Oh and leftover shepherds pie is fab in toasted sangas if you don't have enough to go around for a whole meal.

    pastizio is yummy - like lasagne but with pasta (like macaroni or penne instead of flat sheet but can't find a good recipe ATM cause i have a screaming baby attached to me... later!
