    Amelia - I'd love to take our SC, but we have absolutely no room! We have to pack so much stuff because we are away for so long, so unfortunately I can't bring it.

    Hamburgers
    Apricot Lamb Curry
    Jacket Spuds
    Tune Pasta Salad
    Maybe some BBQ type things - like coleslaw and sausages

    are you staying in van parks ?? cause if so most parks have fantastic csamp kitchens so you can basically cook anything you want

    What about making some meals & vac sealing them? Then you could just put it in the fridge for the day & heat it up over the stove? This is what we do on big trips just to take the pressure off. Great for those nights when you've been travelling all day & don't have much daylight or energy left!
    I have book called Caravan Chef that I found very useful while camping. Includes things like
    Savoury Omlettes
    Chicken Noodle Soup
    Pasta dishes
    Stir Fried Rice
    Chicken Risotto
    Veggie Risotto
    Chicken Casserole
    Stir Fried Beef & Veggies
    Salmon Rissoles
    Curries
    All done on the stove too.

    You could use couscous in place of rice for some dishes - it cooks by just adding boiling water

    i just cooked the following for dinner tonight and thought of you, its cooked in one saucepan
    its quick and easy and tbh you could use any type of meat including left over sangs in this or a bought roast chook etc..
    you could also add what ever vegies you have at the time

    original recipe

    oil
    1kg chicken thighs (i use two thighs for all us)
    2 zucchinis
    2 leeks (used onion tonight)
    6 roma tomatos (i used a tin of toms)
    300g (1 1/3 cups) of risoni pasta
    160g (1 1/3 cups) olives
    2 cups chicken stock

    i cheat and cook the easiest way!
    cook onion for a few mintues, add chicken and brown, add vegies and tomatoes, then add risoni, olive and stock, bring to boil and simmer for 10 or so minutes, remove from heat and stand for 5 mintues!
