have you had a look at the taste website? Just type in rosti in their search box and a heap come up for potato rosti's. Looking at them, they look like corn fritters, but potato? Is that right?
A couple of potatoes
1 large carrot grated
1 zucchini grated
two eggs
sr flour to thicken a bit and lighten them.
You can also separate the eggs and beat the whites to make them light and fluffy and fold them through and that mkaes them even lighter and fluffier
I also do them and add in lots of other vegies, depending on what i have
