    I chuck them through my carbonara (yes, you can do a vegan carbonara!) about 2 minutes before the sauce is finished cooking. So I have onion, bacon, mushroom, peas and zucchini in there. It's yums.
    Just wondering how it can be vegan if it has bacon in it? Or have I missunderstood?

    I LOVE zucchini too and have been known to make stuffed zucchini boats. Similar to christy's method but I add bacon and tomatos (and sometimes capsicum) to the scooped out insides, fry it all up, thicken a little and then put it back into the shells, cover with cheese and bake untill the cheese is melted and the shells are a bit softer.

    Fritters!

    grated zucchini
    onion
    potato ?
    carrot ?
    corn kernels ?
    sundried tomato ?
    bread crumbs
    egg
    cheese grated
    herbs

    Grate vegies and combine (squeeze them out if using 'wet' vegies).
    Add mixed egg, bread crumbs, grated cheese, herbs.
    Combine all ingrdients.
    Make into patties and fry in pan (or on BBQ hot plate).

    * you can go freestyle shapes, or use round egg rings and make them all same size.

    I make Zucchini slice a bit and use Buckwheat flour instead of S.R. flour. If it's a bit runny I use another egg.
    We got onto Buckwheat when DD1 was taken off wheat years ago and now I don't like it made with S.R. Flour. The Buckwheat gives it a nicer flavour.
    Someone my DH knows has only used it as a sweet dish didn't know you could use it as a savory.

    I made a really nice pasta the other night, and thought of this thread!

    Saute garlic, bacon strips (I use vegie bacon) and then add sliced zucchini on really high heat, so it blisters. Add a chopped tomato, then squeeze a big fat fresh lemon over it all. Turn the heat off, layer rocket over the top, then stir it through pasta. Serve with boatloads of pepper.
