    Share Your Favourite Low Carb and/or Low GI Recipe!

    I love carbs. Love 'em. But simple carbs - and probably one or two complex ones - don't agree with me. By "don't agree with me" I mean they make my insulin levels rise and it is all stored as fat. I know this is very common as it effects pretty much all women with PCOS and associated hormonal disorders.

    Anyway, I thought I would start a thread which hopefully will be filled with delicious, low carb and/or low GI recipes so we can all keep eating yummy stuff which is much healthier and easier for our bodies to process

    Oh yeah, it would be good if they were low in saturated or trans fats too!

    Great idea N2L!

    I'll start things off posting a simple but yummy recipe for a "muffin" which makes a great bread substitute. You'll notice it has no flour so it is also good for celiacs.

    Enjoy!

    Cheesy Mexican Muffins
    1 x 400gm can cannelini beans (drain & rinse)
    3 eggs
    1 T. oil
    1 tsp. baking powder
    1/3 c. almond flour or meal
    1/4 c. reduced fat sharp cheddar cheese (shredded)
    A few sliced pickled jalapeno pieces (the more, the spicier!)
    1 & 1/2 tsp. chili powder (to taste)
    1 Tbsp. dried chives
    3/4 tsp. salt

    Preheat oven to 180. Spray a 12 ct muffin tin with olive oil spray (or use nonstick). Pour all ingredients into food processor and blend for about 2 minutes. Pour batter evenly (about 1/3 of the way) into muffin tin. Sprinkle the tops of each with about 1 tsp. additional shredded cheese. Bake at 180for 18-20 minutes.

    These are soooooo good!

    Almond Meal Pancakes
    1 cup almond meal
    2 eggs
    1/4 cup water (for puffier pancakes, you can use sparkling water)
    2 T olive oil
    Teaspoon vanilla
    1/4 teaspoon salt
    1 T sweetener (optional, I don't like using artificial sweeteners so I tend to leave it out)
    Cinnamon to taste (optional, but cinnamon is a wonderfood when it comes to blood sugar)

    Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little olive oil spray. The only real difference is that they won't "bubble" on top the same way as regular pancakes. Flip them when the underside is brown.

    - For savoury pancakes, omit vanilla and cinnamon and top with salmon, etc ....mmmmm

    These are "nuttier" than regular pancakes. I like them though! The trick is not to cover them in high carb toppings. Stick to berries, etc.

    Cauliflower Soup
    3 cups water (or stock)
    1 cauliflower
    3 celery sticks
    1/2 chopped onion
    1 chicken bouillon cube
    1/2 c mushrooms, if desired
    Pepper, chilli flakes, etc to taste

    Simmer all ingredients together until tender. Place in blender and blend on low. I let mine cool somewhat before blending.......enjoy!

    For extra flavour, you may like to serve with some grated low fat cheese and/or lean bacon bits.
