    Lots of smoothie!!
Also, you can make a REALLY spicy curry and as a side dish slice banana and roll in dessicated coconut, which takes the chilli taste away.
A friend of mine freezes them and cooks with them later, she says they are fine but I've never tried it.

crush some nuts, roll the banana in it and freeze them.

My favorite way to eat banana is on bread and covered in raw sugar. Love it

When I have bananas that are too ripe for my liking but I don't want to cook on that day I just freeze them and use them in a banana cake when I feel like baking. They work out just fine.

    peel banana
    wrap in alfoil
squeeze lemon over banana (still inside alfoil)
    close up alfoit
    freeze it

when you eat it, it's a bit like eating icecream

I have 2 rather overripe, medium sized bananas.

Anyone got a muffin or cake recipe for me?

i ended up making banana cake with chocolate icing. i only had lunchbox size banana's so used 4.

    1/2 cup butter
    1 cup sugar
    2 eggs
    1/2 tsp bi-carb
    2 tbsp milk
    1 1/2 cup SR flour
    3 mashed bananas

    - Cream butter and sugar - add egga - in different cup mix bicarb and milk then add to mix - add mash bananas - mix in SR flour.

now we arent really into cake and ended up eating the entire thing in only 2days.

I don't bother peeling them, just pop them in the freezer in the skin and then they are there when you need them... I use them for muffins or banana bread
    Cheers,
