I will either have a salad sandwhich, some sort of jaffle or toasted sandwhich or sweet chilli chicken wraps.
I buy an extra chicken fillet when I go shopping and I slice it into smaller fingers kind of like what you would get in a box of ingham chicken tenders or the like. I crumb them using mayo and breadcrumbs and freeze them individually so that I can pull one out and pop it into the oven when I feel like it. Takes 20 mins at 200 degrees
I will either put one of these on my salad sandwhich or make the sweet chilli chicken wrap. I always try to keep some lettuce and tomato and beetroot in the house, I also add some cheese a squirt of mayo and obviously some sweet chilli sauce. If I dont have pita wraps I will just make it into a sandwhich.
I am a flavour kind of person, I need lots of flavour not just boring stuff, I dont do soups and being pregnant I cant have deli meats so thats why I pre prepare the chicken and freeze it.
I usually have ham and salad sandwiches, because that's what I make for DH's lunch on weekdays and it's already out on the bench so it's no biggie for me to make one more lol In cooler weather, I whip out the jaffle iron and do ham and cheese toasted sangas, sometimes with a bit of BBQ sauce and/or a slice of pineapple inside just for something a bit different.
If I'm not feeling into a sandwich, I might make simple nachos if I have corn chips and salsa laying around - just a pile of chips, dollops of salsa, grated cheese and pop under the griller, then a blob of sour cream on the side (and mashed avo if I have any handy!).
On weekends though, DH usually just buys HJ's or hot chips, or we have a really late 'brunch' (at, like, 2pm lol) of bacon and eggs on toast.
I try to get the kids to eat decent lunches, usually sandwiches or fruit and crackers etc... they usually just want junk but if I give them something healthy to pick at they usually eat at least some of it :/ I have grazers though so they just pick all day long, really :/
Leftovers from dinner mostly or my new fave thing for lunch is pizza on turkish or pita bread, bit of crushed tomato, garlic, baby spinach and whatever else is lying around. So yum and pretty healthy, more fun than a sandwich.
