    tonight is chicken pasta bake - was cooking chicken bolognaise stuff for DH to take to work and figured i'd do some extra, chuck it in a pan with some cheese and dinner is done

    have i mentioned before how much i LOVE my slow cooker?!?!

    Yum Christy! I've been craving vegies lately.

    Which is why we're having sausages tonight (sundried tomato and basil), with potato gratin and steamed broccolini.

    We had lamb, pasta and tomato soup tonight. Actually just finished it. DP finished work very late tonight.

    Tonight we're having eye fillet steak with 'Mums Special Salad' (Lukes name for the only salad in the world that he'll eat! )

    My salad;

    * Baby Spinach leaves
    * Baby cherry truss (or baby roma) tomatoes halved
    * Lebanese cucumber, cubed
    * Danish Fetta Cheese
    * Juice of a lime

    Basically just cut the fetta finely, and then put all ingredients (except lime juice) in a bowl & toss - as you continue to do it, the fetta will turn into like a thick mayoniase consistency - like a paste.
    Squeeze the lime juice in and toss lightly again - the longer it sits it will make more 'juice' from the combined lime & fetta.

    Is VERY VERY yummy... I'm sure its a real recipe that I've probably stolen and laid claim to from somewhere but it came together for me by throwing a few things together one night when I had had a few glasses of wine & wasn't really concentrating!

    DH told me the combination of lime juice & fetta may be not so nice... but its yummo

    We love it - we have it a few times a week (in the summer) - with either chicken breast, steak, or other things

    PIzza Capers tonight.... can't be bothered. Too sick in our house to cook. I have enough left over soup for the girls but DH & I will have to have a lamb pizza.

    Roast chicken stuffed with pancetta, garlic, apricot & sage stuffing. And under the skin I put garlic butter to keep the breast moist. And under the trivet is white wine to keep the chicken extra succulant. Sounds like an overload of flavours but it really is the best roast chook ever. Served with mashed potatoes and braised peas.

    For dessert we're having chocolate & ginger cheesecake.

    Copied and pasted from the fresh food breaking the jar/can/bottle habit thread...

    Operation nachos was a success!!! The mexican mince recipe from Christy was perfecto, pretty close to the El Paso taco kit flavour. I did add some cayenne for extra spiciness.

    So I layered my nacho chips, the mince, the salsa and cheese and put in the oven at 160 or so until the cheese melted.

    The fresh salsa recipe I tried was the following

    2 spring onions, finely sliced
    4 tomatoes (about 650g), seeds removed, finely diced
    1 each of red, yellow and green capsicum, seeds removed, finely diced
    4 tbs (1/3 cup) roughly chopped flat-leaf parsley, plus extra to sprinkle
    1/4 cup (60ml) olive oil
    Juice of 1 lime

    I didn't have spring onion so used brown onion. I only had green pepper and I forgot the oil I added in jalepeno peppers for added spiciness.

    We have had the nicest dinner tonight!! DH cooked most of it which made it even better!!
    We had: roast beef with garlic in it cooked with red onion in the BBQ with some hickory chips to smoke, then his famous potato balls which are mashed potato with a chunk of cheese in the middle, rolled into a ball and crumbed and fried. We also had some zucchini.
    Then dessert- (we don't usually have it) Homemade banana fritters which I made and DH cooked with this beautiful Peter's creamy vanilla icecream and a caramel sauce I made from scratch!
    YUMMO!!!

    Creamy tomato and bacon Gnocchi

    180mls cream
    2 portions of frozen spinach
    300g diced bacon
    2 tbsp tomato pesto
    handful mushrooms
    diced red capsicum
    packet of gnocchi

    Cook bacon in frypan, no added oil needed, until crisp. Add mushrooms, capsicum and cook until tender.
    Place gnocchi salted water and cook until al dente (about 5 mins usually).
    Heat cream in saucepan, add pesto and stir til combined add the vegies and bacon. Add spinach portions.
    When the gnocchi is cooked, drain, and add sauce. Stir to combine.
    Place gnocchi in oven proof dish, sprinkle with cheese and place under the grill for 5-10 minutes until the cheese melts.

    this is really yum!!!
    i dont have any caps so adding a few small diced zuchinni!
    iv also made my own gnocchi (thanks suse and thebear)!!

    Friends are bringing dinner over here (Izzy is allergic to their 2 cats so we can't go there anymore!) Anyway I think we are having spag bol mmmmm AND I am making soft-centred, choc jaffa puddings for dessert with double cream - double mmmmmmmmmmmmmm!

    Sounds great!!! Can I come over? How long did it take to make the gnocci, I was thinking about making some this week if I get the time. My veggie garden is 1st priority though.

    I am having 2 min noodles again. I am a bit scared about the fact I have been eating something with antioxidant 319 which gets the double sad face in the Chemical Maze list... If only it wasn't such a major pregnancy craving.

    Tomorrow morning if I get motivated I will make french bread and homemade pasta, sauce and all.

    Sarah - you put me to shame! I need some motivation, all I cook is desserts or sweet stuff! The thought of making yummy homemade bread appeals so much but actually trying it scares me!!!
