    I don't have a recipe for it, but basically I dice up some pumpkin into small pieces and fry it with some garlic - sometimes I also fry finely diced onion too, it depends on my mood. When it is cooked I add it too the whisked eggs and crumble in some fetta. I often use 2 different types of fetta - danish & australian or greek - but it is fine with just one type. I make sure there are chunks of fetta too as I love fetta! I then add some grated cheese and pour it into the base and cook. Your don't have to add the grated cheese if you don't want to.

    This sounds awesome Lisa - definitely going to give it a whirl! Thanks so much. Do you fry the crap out of the pumpkin so that it's really soft? Or do you leave it a bit harder? I'm just new with pumpkin. I have aquired the taste! Love roasting it with some honey on top - delish!

    Our Lazy dinners include:

    frozen fish and chips
    Homemade sausage rolls (beef or veal mince with tuscany seasoning and onion and puff pastry, uncooked lay the mince mix on the puff pastry then roll it into a roll and then cut into small or large sausage rolls and cook in oven 15mins or so, its delicous and 5mins to prep)
    Oven baked risotto (spray oil on the baking dish, add aborio rice (usually 2 cups), I then fry chicken, garlic, bacon and onion together add tomato paste if you want a tomato base one, put that in the baking dish, then I add frozen veges and then poor chicken stock over the top till everything covered, add any seasoning you want then cover with foil and put in oven at 200 degrees c cook for 50mins or until rice cooked! so easy.

    I do the pumpkin so it is close to soft, especially if they are very small diced pieces.

    instant noodles cooked in a pot (not the ones u leave in a bowl with boiling water) with a cracked egg, some beef if i have any and poured over some lettuce

    Mmm we do similar! Instant noodles in the pot, chopped up tofu, in another pan fry up some butter ad garlic and add bok choi, add to noodles, in pan used for bok choi fry an egg and serve that on top. Sometimes with thinly sliced beef in the broth to cook. Yummo!

    Totally! We live in a mainly Asian area, so they're real instant noodles with a million different little sachets etc

    Lisa I did this tonight and omg it was fantastic! Fried up the onion, pumpkin and garlic until soft, then mixed it with beaten and seasoned eggs, crumbled feta, grated cheese (tasty and Parmesan) and spring onion. Served with a simple salad, mmm it was divine and super quick and easy!

    Glad you liked it. It is a huge hit here and it is also really lovely cold My older kids love to take it to school.

    It's my new fave...I love pumpkin and ADORE feta, I made sure the chunks were quite big so that when you cut a slice of it there was a nice gooey pocket of melting feta. Noms!

    Shooting star told me a receipe many years ago that my girls love...

    bolognaise Val u vunts

    make a mince bolognaise pour into val u vunt casing of choice, sprinkle with cheese and heat in oven til cheese melted... my girls love it!!
    Yum... I am going to try this tomorrow night.. Thanks for the idea

    Our lazy meal is a bought bbq chook, with avocado, tomato and cheese in bread and in the toaster maker. Oh yum. I reckon you could do it with duck too Jayne, would be delish! Hot duck jaffles. Yummmm.

    Another quick and easy dinner and the kids love it - I chop up at least 5 different ingredients mainly whatever needs to be used up from the fridge (ie chicken, ham, onion, pineapple, capsicum, mushrooms, anything really etc) and get the kids to make their own pizzas for dinner... It's works a treat in out house, the kids "make" their own pizza and then are more happy to eat them cause they made them...
