pound them with a meat mallet (or any other hard implement, like a rolling pin) to thin them out, dip them in egg then breadcrumbs, lightly brown in a frypan on each side, then top with tomato pasta sauce and cheese, then bake in the oven for maybe 20 mins or so and you have chicken parmigiana. Or you can skip the topping, and just fry them and you have chicken schnitzels. Cut them into small pieces, dip in egg and breadcrumbs and bake and you have chicken nuggets. Or you could just marinate them and bake.
4 boneless skinless chicken breast halves
1 package reduced-salt taco seasoning mix
1 jar salsa
1/4 cup light sour cream
1. Spray the crockpot with cooking spray.
2. Add the chicken breasts.
3. Sprinkle with Taco Seasoning mix.
4. Top with salsa.
5. Cook on low for 6-8 hours, or high for 3 hours depending on your
crockpot.
6. When ready to serve, remove the chicken from the pot.
7. Stir in 1/4 cup of sour cream.
8. Serve with rice.

southern fried chicken fillets (you can get a pack of seasoning in the spices aisle at the shops) - either with veg, or we turn these into chicken burgers (hot) or chicken sangas or wraps (cold chicken)

I was looking for a recipe for chicken breast fillets this morning and came across this one, so I made it for tea tonight and it was really nice I will make it again for sure.
Chicken with creamy mustard sauce
500g chicken breast chopped into cubes
1 onion, finely chopped
1 clove garlic
2 Tbs wholegrain mustard
1 can light evaporated milk
1.5 Tbs corn flour
salt & pepper to season
Spray frying pan with cooking oil spray and brown the onions and garlic, set aside.
More spray, brown the chicken for about 5 mins.
Reduce heat, add onion and garlic.
Combine milk, mustard, cornflour, salt and pepper and add to chicken.
Stir until thickened. Season and serve over rice or pasta.
I also added spring onion because I had some in the fridge that I needed to use up.

Chicken Parmy Casserole
2 chicken breasts
breadcrumbs
mayo
bacon
onion
minced garlic
your favourite Spag sauce
basil
oregano
shredded cheese
Cut breast fillets in half length ways and flatten out with a meat mallet
coat in a thin layer of mayo and coat with breadcrumbs (you can do the traditional egg and breadcrumb crumb if you like but I prefer mayo)
Cook in 180 degree oven for 20 mins or until cooked
Meanwhile add diced onion, diced bacon and 2 tsp minced garlic to a saucepan or small frypan, fry all up together until soft and cooked. I sometimes add chopped mushrooms if I have them handy. Once cooked put to the side.
Once chicken is cooked, place in a casserole dish, pour over bacon, onion, garlic mix, pour over jar of spag sauce sprinkle with basil and oregano then top with shredded cheese. Put back into oven until cheese has melted and slightly browned.
I usually serve with steamed vegies and potato bake or scalloped potatoes.
