I've heard of chocolate cake with beetroot in it? Maybe try one of those recipe websites they have some great one's.

3 eggs
3 teaspoons vanilla essence
½ cup milk
1 large grated zucchini (leave skin on)
½ cup oil
1 teaspoon salt
1 teaspoon bicarb soda
¼ teaspoon baking powder
2 cups sugar
Dry mix :
2.5 cups SR flour
½ cup cocoa
Method.
Use large mixer bowl, combine wet mix ingredients & sugar thoroughly. Sift dry ingredients and combine with wet mix thoroughly. DO NOT OVER-BEAT, as this will make the cake tough.
Pour into large baking tray, or muffin / patty pan trays.
Bake in slow oven for 45 minutes, or at 150 for 1 hour. (Or less if making muffins etc).
Foolproof. Yummy. Good even on day 3, if it hasn’t already been devoured…..Enjoy.
wow thanks for all the response. From what i can work out, it can be any cake as long as it contains a vegetable. i was thinking about a banana cake but aparantly thats a no no as its not a vegie. I think i might try the Choc beetroot, if that fails then the zuchini one.
Yules: do you think i could omit some of the sugar? or does it need it all to make it tasty?
I've only made that recipie once. Not sure if omitting it would be good...when I made it the mixture was really thin and didn't really rise a great deal.....(I don't think I' put enough stuff in...I didn't have enough flour or sugar)
BUT it was really nice and really moist. DS loved it...even after he realised there was grated zucchini in it!
I made my chocolate beetroot cake. I used a recipe from allrecipes. It has an awfullot of sugar but I was nervous to cut any out first time in case it tasted foul. It's pretty yummy but would be fine with a bit less sugar too.
100g drinking chocolate
230g self-raising flour
200g caster sugar
100g dark chocolate, minimum 60% cocoa solids broken into pieces.
125g unsalted butter
250g cooked beetroot, grated
3 large eggs
1. Preheat oven to 180 degrees C. Butter and flour a 18cm round cake tin.
2. Sift flour and drinking chocolate together in a bowl, then stir in the sugar.
3. In a bowl suspended over a pot of hot water, melt the chocolate and butter.
4. Add the beetroot and the eggs and mix well.
5. Eventually add the beetroot mix to the dry ingredients and mix well.
6. Pour the mix into the prepared tin and bake for 50 mins until a skewer comes out clean. Leave to cool in tin for ten minutes.
7. Decorate by dusting with icing sugar or it is delicious served warm with custard.
