    what to do with home grown tomatoes ?

    hi everyone,

    we have been very successful growing tomatoes in our vegie garden and we now have heaps with more to come but i don't know what to do with them all so im looking for any suggestions.

    we have vine riped ones, cherry tomatoes, grape tomatoes (i think thats what they are called) and roma tomatoes.

    can i mix them all together and cook them up into something or should they be dealt with seperately ?

    im thinking of making things like tomato sauce, tomato paste, something i can use as a base for casseroles etc

    YOu can mix them. We grow tomatoes as well. We lovechopping themall aup and making bruchetta! YUM!

    Yes, they can be mixed. Make your own pasta sauce and freeze in usable lots.

    You can also make your own sauce, chutney & soup are a few that come to mind.

    My sister makes her own tomato sauce using a bottle of ezy-sauce from the supermarket. It's delish!

    I have had an over supply too - I just pureed mine in the food processor and froze. The last lot I roasted in the oven and then froz for use on pizza or something down the track.

    I've made home made tomato sauce in the past too and it was delicious!

    you could roast them in the oven with asparagus, peppers, mushrooms with olive oil, herb salt and basil....

    My cherry tomato bushes are thriving at the moment and if I didn't eat all the ripened ones as they got red, I might be able to make something too!

    But my romas are just coming ripe, so I'll sub for ideas!

    bolognase, so you can use it with pasta, in lasagnaes, in chilli, and even as a base with curry

    just as a tomato sauce, for boulibaise (sp?), raggout, casseroles, cacchitore (sp?) etc ...

    or just slice thickly, drizzle some balsamic, add some feta and some fresh basil, and EAT! delicious...

    thanks for all the great ideas ! what else would i put in with the tomatoes to make a pasta sauce ? things like garlic, herbs, stock ? im really not sure then i would puree it all ? also how would i make tomato paste (we love home made pizzas)

    I make my own pizza sauce and freeze it in small serves. I puree tomatoes in the blender then simmer with crushed garlic, herbs, veggie stock powder and chilli.
