    Question Chicken fillet recipes ?? ... Need one for tonight : )

    Hello all,


    I have 2 (or I can use 4) chicken fillets defrosting for tonight's dinner ... & I'm bored with my usual recipes for DP & I


    Can you all throw some recipes my way ... I'd be ever so grateful


    I have a heap of mushrooms, some big carrots, heap of brown onions, ... some light sour cream ... jar of sundried tomatoes, jar of pesto cream basil, jar of red curry, frozen corn kernels & beans, and basmati rice & all sorts of dry pastas.

    (Hey, I know we haven't done our weekly grocery shopping yet !!!)

    Please let me know of any other ingredients in case I might have them at hand

    Chicken in coke, apricot chicken, homestead chicken pie, mainly casserole type dishes.

    We're having an Asian style noodle salad for dinner tonight.
    You need rice noodles, fresh mint, fresh coriander, fish sauce, sugar, chilli, fresh lime, chicken breast.

    Prepare the noodles then drain and chill them.
    Shred about a cup of Mint and coriander and toss it on top of the noodles.
    Slice your chicken breat and give it quick stir fry.
    Mix a sauce with equal parts of fish sauce, lime juice and sugar and chilli to taste. if you have some spring onions chop one into the sauce.

    Put the chicken on top of the noodles and herbs then pour the sauce over and toss it all together and then you eat it.
    It's yummy with some stir-fried veges on the side....

    Chicken in coke:
    Roll diced chicken(500gms approx) in cream of chicken soup(or savory chicken soup pkt not instant). Place in a casserole dish and sprinkle remander of soup on top, pour 1 can 375ML of coke on top of chicken and bake for 1.5 hours on 180degrees, you can also add whole sliced onions to this dish and I normally serve on basmarti rice. It turns out like a gravy on the chicken. (can be cooked in a slow cooker)


    Apricot chicken:
    Apricot nector tin 400ml, 1pkt french onion soup, onion if desired.
    Mix apricot nector and french onion soup thicken on stove, Brown chicken coated in plain flour, pour nector mix over chicken in a casserole dish and bake for 1.5 hours on 180 degrees. ( can be cooked in a slow cooker)

    I'll look up the homestead pie for you and post here shortly, hope these might help!

    snoopea- can you do that recipe with diet coke??

    Yes, I've done it with diet coke and coke zero as long as the coke fizzy it'll work out fine, my mum passed it down to me we've been making it for years and it's worth ago!

    Homestead chicken pie (from Symply too good to be true and is a low GI low fat recipe and is recommended for people with diabetes)

    Pie filling:
    600gm chicken fillet, cooking spray, 1 medium onion diced, 250gm mushroom quartered, 1.5 cups skim milk, 1 sachet cream of mushroom cup of soup, 3 sachets cream of chicken cup of soup, 2 tablespoons of chopped parsley (i use dried), pepper to taste

    Pie top:
    1 tablespoon 15gms of Flora light margarine, 1/4 cup of skim milk, 1 egg white, 1 cup of s.r flour, pinch of salt

    Method:
    Preheat oven 220 degrees fan forced

    To make filling:
    Cut chicken into bite size pieces, coat a large non stick frying pan with cooking spray, saut? chicken for 3 minutes. Add onion and cook for 2 minutes, combine milk with soup mixes then pour in pan, stir in parsley, pepper to taste once mixture has boiled pour into casserole dish. Leave to one side.

    To make pie top:
    Melt margarine in microwave, add to milk and combine, Add egg white and beat with a fork until blended. In a medium bowl put flour and salt, pour milk mixture into flour and combine, turn onto floured surface and roll out dough to size of casserole dish. Using rolling pin roll up pie top and lift onto pie filling, trim edges and make a decorative edge with back of fork or pinch with fingers. Using pastry brush, brush a little milk over top, bake 10 minutes or until top is golden brown and cooked in centre.

    Variations to pie are: rump, lamb, veal or butterfly pork steaks.

    you could stuff the chicken breasts with chopped sundried tomatoes and cheese. Serve with vegies onthe side

    A sauce with mushies and sour cream - i would pan fry onions and mushies then add a bit of wine or stock to deglaze, then stir in some sour cream and parsly if you have some - if not, leave it out. Just pour over grilled chicken and vegies.

    Chicken, mushroom, sundried pasta bake

    Basil pesto, mushroom, chicken and sourcream spaghetti

    I am hungry now lol......

    My fav chicken is Avocado and djon mustard ontop its soo yummy and easy just cook the chicken in a frying pan then cut avocado into slices place ontop of the breast then drizzle the djon mustard ontop yummy hehe!

    GRACIE, ... Yeh I found some frozen puff pastry sheets (gee, I didn't know I had any until you asked Gracie & I went looking in the freezer, LOL )


    MrsB26, ... Oh that sounds yummo with the basil pesto, mushrooms, sour cream AND ... I have dry fettuccine pasta ... NOW, how do I make it ??? Oh, I'm so ' not ' a super cook after all these years


    MrsB26, - If you could pretty please let me know how to make the sauce for the pasta ... Oh, that would be brilliant

    you could make chicken parcels

    cut the chicken into small pieces and lightly pan fry
    wait for the chicken to cool, (put in fridge if need to)
    take a few sheets of pastry out of freezer to defrost a little
    place chicken, grated cheese and any other ingredients in centre of one sheet of pastry and wrap up like a parcel
    other ingredients could include things like tinned pineapple pieces, sundried tomatoes, anything you like!
    grease a baking tray with lots of butter
    place parcels on tray all sealed up well, brush over with some egg
    bake for about 30 mins 180 dg. yummo!

    Oh, thanks an absolute bunch Gracie ... I'm gonna make them as a side dish with MrsB26 pasta dish (that's if she gets back to me with how to make it )

    Oh no, looks like MrsB26 has gone off line !!!! ... Does anyone know how to make the sauce she suggested just before ??


    ... Do I just heat up the sour cream with mushrooms (or cook the mushrooms 1st ??) & add a dollop of basil pesto ?? ... Do I pan fry the chicken, & if so, is it better to cube (diced) in small pieces or doesn't it matter ??


    THANKS AGAIN, ... HOPE SOMEONE CAN HELP A DESPERATE BORING COOK, augh !!!!!!

    Mushroom and chicken -
    Brown some chicken and a bit of onion, chuck in mushrooms with garlic and cook them until soft then stir in some sour cream and pesto and salt to taste and pour over fettucine.
