    Talking bread and butter pudding

    ok i need a recipe!! sure i can get one on line but thought id ask here first for your favourite recipe!!

    Use pannetone instead of bread and add some lemon zest or marmalade to the custard mixture... sorry don't have a recipe cos i usually just wing it.

    also lightly spread Jam on the bread before adding mmmm yumbo

    don't know a recipe though as dh makes it

    1. 3 eggs
    2. 600ml milk
    3. 2-3 TBL sugar
    4. vanilla
    5. 1/2 tsp butter
    6. mutmeg
    7. bread/jam/sultana


    • beat eggs well then add milk sugar and vanilla ( in never use vanilla)
    • stir until sugar has dissolved
    • strain into a greased pie dish
    • spread bread lightly with butter (or Jam)cut into squares or triangles arrange on top of custard mixture
    • make sure bread is saturated with custard before baking even if you push bread into mixture
    • if using plain bread you can sprinkle with sultanas
    • sprinkle with nutmeg (again not neccesary)
    • stand pie dish into baking tray of water about half way up dish bake in slow oven 160c until custard has set
    • serve warm or chilled with fruit

    I usually wing it but Rach's sounds pretty close. The only other thing I do is spread marmalade on each slice of bread - it gives it a really tangy aftertaste that I love - but isn't for everyone (interestingly I was watching an old episode of Pie in the Sky the other day and that is what they did too)

    My fave is made using brioche or waffles. You layer lindt chocolate broken between layers and raspberries (or banana's) and then poor over the custard, top with more chocolate and fruit and then poor the custard mix over, you bake uncovered for about 30 mins, then cover with foil if chocolate is starting to burn and bake for another 15-20 mins. Its absolutely DIVINE! Same again with brioche or croissants, but I tend to butter the bread or croissants with nutella first

    thanks cai, does it matter if i use bread or waffles? never really had waffles before !
