    I prefer it with milk chocolate - usually 350g milk choc and 100g dark choc when I make it.

    I've just made it with sweetened condensed rice milk!!! It worked! Yum I can't wait to eat it! So I used dark chocolate (without milk solids) sweetened condensed rice milk and rasberry lollies.

    Dairy free sweetened condensed rice milk
    3 cups rice milk
    1/2 cup sugar
    1/2 tsp vanilla paste
    pinch of salt

    Pop it all in a saucepan and cook over a medium heat until volume = 1 cup!!! Thats it! YAY! I can have diary free fudge

    I bought 3 cans condensed milk only to find when I got home 2 were skim. Will this make any difference to the fudge?

    i've used skim in other things rivlas with little difference - maybe not so rich would be the only thing I could think.

    I tried to cheat and melted the choc with the milk and butter in the microwave (I usually do this if something requires melted chocolate with success) - I don't know that it got enough heat to the condensed milk though. I didn't keep the mixture going until it was really thin for fear of burning the chocolate so although it has the texture of fudge it really just tastes like the choc with roast almonds that I used, doesn't have the extra sweetness of fudge - is this due to not long enough on heat so to speak do you think or is the apparent taste right and I was just expecting more of the condensed milk to come through in the flavour but it doesn't due to the quantity of chocolate.

    still liked the taste of what i made just wondering whether I got it right or not by trying to sidestep the saucepan on the stove.

    Are caramel melts like the chocolate ones? I've never seen them before. Jersey caramels might work Netix.

    I have to get my caramel fudge fix before then though, now that i have fudge on the brain! I love fudge. I love the texture. I love the taste. I'm salivating atm LOL

    Sorry, I'm laughing..... Yeah, caramel melts! What do you mean you haven't seen them?!?!? They are with all the other melts. Sometimes hard to find though (like the store might not carry them)

    well i haven't seen them before i hun!

    I just went to Safeway and in the cooking section, there were no other melts other than dark,milk and white chocolate. What i did find was this Caramel top n fill. It is made by the same people who make condensed milk and it comes in the same tin, so i'm going to use that instead of condensed milk.

    yuuummmm.

    bwaaaaa!!!! What if I post you some caramel melts.....

    I forgot about that top'n'fill stuff. Never tried it. Not game to! I'd probably eat the whole tin! I think you would probably need to use white chocolate with it.
