    I just finished mine! I made the dough on Saturday and cooked and prepared it today. I wax a bit nervous about the sides not fitting together or the icing not holding, but it turned out perfectly!

    Doh!! I forgot I was going to make it!!! Going to the shops on Thursday, so Friday may be the day for a gingerbread house..

    Ummmm.... is there another icing I can use?? That royal icing has raw egg in it and I'm pregnant...

    I guess just something that will make a thick consistency. Maybe use water (sparingly) instead if the egg whites? There are pieces of gingerbread that don't have icing on it on my house, but there's no lollies on those bits either (the lollies stick on with the egg whites/icing mixture).

    If you can't get the icing to work with anything other than the egg whites, there is an edible bakers glue that you could get from baking supply shops. You could use the icing to put the house together and then the glue for the lollies.

    I have read recipes that use melted white chocolate rather than icing or google joy of baking and gingerbread house - she has a suggestion using marshmallow creme but not sure how hard that is to get. We put our ikea kit together yesterday and it is still up - so prefab all the way this year, lol!

    I would love to be able to make a house this year, but I am still missing more than half my kitchen things, including baking trays (from moving house). Anyway, I tried to make one last year, and as the panels cooked, they curled! Anyone able to offer any solutions?

    DH has a theory that the corners are thinner than the bulk once rolled out, and that's why they curl up. Ours curled in two spots - but both for the roof, so it worked out okay. Maybe sit something on the panels so they cook flat?

    I froze the panels for 15 mins and then popped them straight into the oven. That way the kept their shape perfectly.

    Hmm, okay, thanks PRMG anf Ryatha. I'll try to remember those points next time I have a go. Think I'll have a nap and then have a go at making some plain old gingerbread men. Maybe. If I have a recipe.

    Unfortunately we ran out of money so I wasn't able to buy the ingredients.
    Will attempt it next fortnight!! Why only have a gingerbread house on Christmas??

    HERE is mine! I did the easy ninemsn one with no walls to balance! Also DS has an egg allergy so I melted down a bag of white choc melts, then added about 3/4 cup of icing sugar stirred in and it worked perfectly! Set to rock hard like royal icing and tasted yummo!!

    It was way easier than I thought it would be and am making it again on Sunday morning - kids had a blast decorating!

    I got mine from Gingerbread Folk becuase I couldn't orgainise baking with my newborn around this year.

    We made ours yesterday and took it around to friends to share. Very yummy but almost gone already! I think the gingerbread from the Gingerbread Folk is pretty good compared to some of the others. DD had heaps of fun decorating.

    I also like that all he packaging is compostable.

    We made shortbread cookies to give away so I'm going to try making the gingerbread ourselves as well next year. It's the icing to hold it all together that has me more worried though!

    Just be sure to buy or make royal i cing it is like cement for cake decorators lol :-)
