    Icing For A Kids B'day Cake!

    Hi all,

    Just wanting a quick easy way of making icing for a kids chocolate b'day cake. I am not sure what colour i want but i have pink butterflies and multicoloured frangipanies to put on it to make it pretty etc For her. It is a butterfly fairy cake i am doing.

    Any suggestions would be great!

    My icing is easy peasy

    1 1/2 cup pure icing sugar
    1 tbsp nuttlex (or butter)
    1 tbsp beetroot puree (or 4-5 drops food colouring of your choice)
    1 tsp vanilla

    Grab your hand mixer and beat away, adding drops of rice milk (or normal cows milk) at a time until it is fluffy and a good texture. This can be a thick icing or a thin one depending on your needs.

    We are dairy free in our house & additive free which is why I use pure icing sugar and no colourings, well most of the time. The beetroot puree turns the icing a bright hot pink. HTH!

    Definatly get some Betty Crockers Frosting. You just add the food dye to it.

    My icing is 200gms butter 200gms icing sugar and 1 tsp vanilla

    Beat the butter till soft (I use unsalted) and pale, then add icing sugar and vanilla, mix on low to combine then on high till pale. You can then divide up how you like and add colourings.

    Christy, I'm fascinated by the beetroot concept as I have a friend with food-chemical-sensitive kids and she is the mistress of white and pink (cochineal) food, although she recently discovered she could use turmeric for yellow with no problems.

    What sort of beetroot do you use...from a can? Fresh? Fresh but cooked? Dying to know because her kids would be besides themselves with glee if they could have Hot Pink food!
