If you dont like soy, have you tried rice milk? My sister used to be allerigic to dairy, wheat and soy amongst other things, and me being the chef of the family had to find some foods for her to eat.
Gluten free flours are EXPENSIVE I use almond meal or hazelnut meal, I manage to buy a kilo of that for 10 dollars at cash & carry.
There are many things you can eat, my sister ended up putting on 20kg when she couldnt eat certain things because I made her so much foods. Just try to use more fruits and veges in things. Julie Stafford has some great books with heaps of recipes. She wrote them after her husband got diagnosed with cancer, determined that eating healthier foods would cure him. And it did.
Other dairy substitutes.. Goats feta, canola spread instead of butter, Im pretty sure that there is also a dairy free tasty cheese you can get. Dont know where from though.
