Crumpet, I haven't used dairy substitutes. Quirky cooking does a lot. Or check out if there's recipes on the Recipe Community. A good site is Eat Nourishing. You'll have to convert to TMX though.
Today in the TMX: boiled eggs for brekky. Then for dinner I made up a kind of lamb stew using a lamb steak (we'd cooked some last night and they weren't much good) diced up, with herbs, spices sauted in white wine, then lamb cooked, then 2 cans of tomato with some left over semi-steamed veggies. I cooked that for about 30min, adding the veggies in the last 10 mins. Then I made a sort of biryani rice from the Meat cookbook. Cooked the rice in chicken stock, with garlic, spices and butter. Ate lamb stew and rice. Quite yum despite the mix of flavours.
I then made white chocolate and coconut custard. I might not have added enough white chocolate, but it's still nice.
Apart from the boiled eggs, all of that was sort of made up
