    Okay ausgirl.... I'm feeling inspired....

    So far its the lack of carb alternatives that I've struggled with, I'm still falling back to pasta and rice... Didn't have much in the way of bread last week - except for a gluten, dairy yeast free bread I found at Safeway....

    I made cauliflower rice and it was actually pretty good as an alternative. I also used the slicer thingy that has different settings to make thin ribbons of zuchini which was kind of like spaghetti.
    I don't have spaghetti or rice very often though anyway. Fruit has been hard for me to give up, especially my morning banana.

    My attempt at zucchini spaghetti was not that successful lol more like zucchini mush

    I am still following - enjoying seeing stuff on FB, not managed to do much myself - but am changing some of my choices and feeling better about them. I just need to get organized doing alot of traveling at the moment which has made breakfasts easier!

    High N2L can I pick your brains yet again?! I got some keto diasticks in the mail today (pharmacy online). What kind of level am I looking at if I am in ketosis? Is there a better time of day to measure?
    The strip hardly changed colour so I assume I am not in keto. Bugger!

    Bought myself one of those peelers and made a delicious pretend pasta using zucchini and carrot - with onion, avocado, tomato sauce and leftover corned beef (from the slow cooker yesterday ) in cubes as the sauce - it was yummy - I used some macadamia oil and olive oil as well. Feeling okay about dinner tonight - plus leftovers for lunch tomorrow

    They say that if you get over 1.5 you are in ketosis. About 4 -6 is a good level to aim for. Anything over 8 means you are likely dehydrated. I measure twice a day. First thing in the morning and when I get home from work at 7pm. But most people do it once

    Ausgirl, I just made the keto cake...yum!

    I only used 1 tbs cocoa and 1 tbs Norbu sweetener. I also put a fat bomb in the middle. And I only made one from the recipe because I am a pig

    I only made it as one too as it's not that big!

    My ketosis reading is 1.5, definitely not more so I guess I am not in keto, does that mean I won't lose weight?

    Doing so well! One thing I love about having a butcher partner is all the offcuts and bones lol.

    Curious about some things, mostly how much extra time have you needed for this new way of eating? Is it getting faster now that you have a few recipes under your belt? How often is your family eating different things vs same things?

    I definitely have to be more organised. I can't just grab a snack/lunch at the bakery, etc like I used to (I have a french bakery next to me at work where I used to get lunch). But things like flax bread/pancakes, etc take no time at all to make (5mins prep). I make a double batch of fat bombs, cookies/cake (for DD and me) and soup on a weekend.

    Sometimes I get annoyed that I have to make cauliflower rice/zoodles when I get home from work if we are having something that requires them, but it's not a big deal. (I make cauli rice and freeze individual batches but they always run out on a work day lol). We used to have to have takeaway once a week, now it's no so easy, which is annoying if I can't be stuffed, but I get over it. I still eat BBQ chicken so that's a good fallback.

    I have always spent one day a weekend baking/cooking meals so it's not much different.

    My DD will eat a lot of what I do. DP is more resistant. He will get there...I can be very persuasive (read: nagging) when I want

    Eta - my really exciting news for the day (for me anyway) is my mum and dad are now converts! My dad is MrCynical/Logical/Science Brain. He has read all of the books and has gone from being highly sceptical a couple of months ago to telling mum "We are changing the way we eat" just yesterday. He has a science degree and teaches biology (he also has cholesterol and blood pressure issues) so I thought he'd be a hard nut to crack, but he has come around after reading the studies. I'm really glad (It's also validation for me, who doesn't have a science brain, that the science behind it all is sound.

    Similar to a keto cake but a little more indulgent and substantial....I made it for me while the others were having Donna Hay brownies. I think I won

    Chocolate brownie in a cup

    Ingredients

    2 Tbsp butter
    3 Tbsp almond flour
    1 tsp coconut flour
    1 1/2 Tbsp granulated sugar substitute
    1/4 tsp vanilla
    pinch of salt
    1 egg
    1 Tbsp unsweetened cocoa powder
    1/2 tsp baking powder
    1 square Lindt 90% chocolate, chopped
    2 Tbsp pecans, chopped (optional)
    Instructions

    Melt the butter in a small microwave safe bowl (about 30 seconds in microwave). Add the remaining ingredients and stir until combined. Pour batter into 2 small greased mugs or ramekins. Microwave for 1 minute. (add another 30 seconds if necessary). Serve with whipped cream or sugar free vanilla ice cream.
    Notes

    Approximate nutrition info per mug: 230 calories, 23g fat, 3g net carbs, 6g protein

    Eta - I left out the nuts so macros would be less.

    I eat high protein, low carb but don't really watch how much fat I eat. I have lost 55kgs in a year eating like this.
    I do use protein powder though which isn't for everyone.
    A typical day for me would be something like;
    Breakfast: Choc banana protein shake for made with light milk, protein powder, protein ice cream (whey whip), chobani yogurt, banana, ABC butter, chia seeds, cacao powder etc.
    Lunch: Eggs with avocado & light mayo on lettuce wraps.
    Dinner: steak and salad or fish & salad

    Snacks are often chobani yogurt, edamame beans, haloumi cheese, nuts etc or just a protein drink.

    At first it was really hard for me to eat this way but now it's habit and I love it. I really concentrate on eating protein as much as possible. I can imagine going back to eating how I once did.
